Because it's supposed to be better for you somehow. Less fatty or something. Additionally, I think it's supposed to be for shortages.

Even so, I think people would have trouble getting past the squick factor.

This actually reminds me of a scene from Gulliver's Travels (the book. I haven't seen the movie), where there's an eccentric scientist who swears that one can process viable food back out of poop.
