Alright, I'm going to go ahead and give a quick run-down of all the games that I've seen in this thread:

Demons Souls - Good for people who enjoy games which are difficult in the cheapest of ways.

Uncharted 1+2 - Uncharted 2 is a fantastic and varied game. Uncharted 1 is a downgraded version of it's big brother, and you don't really need to have played Uncharted 1 to understand what's happening in 2. I suggest making 2 your main priority, and then getting 1 if you have the money, are obsessive about playing games in the right order, or simply can't get enough of Nathan Drake.

Infamous 1+2 - Both fantastic games, although if you attempt to play 2 before you play 1 you may find yourself not knowing what the fuck is going on.

Metal Gear Solid 4 - Frankly, I have trouble calling this a "Game"; The cutscenes are so depressingly long for a while I forgot that interactivity actually plays a part in the experience. On top of this, if you haven't played the first three Metal Gear Solid games you will be completely and totally lost. Anyway, the gameplay itself isn't even that good.

God of War 3 - One of the best stress relievers you will find in games. If you like the idea of playing a game where ripping a man's head off of his body with your bare hands is easily the least violent death that a God dies, then you might enjoy this one.

EDIT: I almost forgot about Heavy Rain. I suppose it's worth a shot, although it's slow as hell to get started, the child voice actors make me want to pull out my own teeth, and the storyline has some ridiculous holes. Regardless, it's an interesting game.

the Uncharteds are awesome, there is also a game called White Knight Chonicles that is awesome! If you wait you can get an updated version for free with a copy of White Knight Chronicles 2. Also Little Big Planet

I'll probably be the only person to recommend it, but:

Heavenly Sword: dismissed by some as a cheap 'God of War' knockoff, its actually a really good hack n slash with compelling characters and an absolute hammy bastard of a villain. Plus SIXAXIS means a lot of fun guiding arrows into the crotches of your enemy.

It's also a really good starting point to see just how much more polished newer PS3 games are; when I played the game the first time, I was amazed at how good it looked.

I want to know what must-have games there are for the PS3. I already have a 360 and PC, so keep that in mind. Also, I cannot play games online, so please don't suggest online-focused or exclusively online games.
CATHERINE
DEUS EX HUMAN REVOLUTION
ELDER SCROLLS V: SKYRIM

That's pretty much it.

I'm surprised no one has mentioned Mass Effect 2. The PS3 version is absolutely amazing. I'd recommend getting that (And it's DLC) as well as inFamous, Uncharted and LittleBigPlanet.

Obviously the uncharted series.
The Resistance games are pretty fun FPSs and they are really cheap now, (cept for third, can't wait for it :D)
Killzone 2 and 3 are alright, if you have to get one get 3 its much better.
God of war 3 is Fantastic, plus you can even get the 2nd and 1st GoW in HD remake form, i had Ps2 versions -__- , lucky.
Infamous was Okay, not really that good in my opinion. but infamous 2 was stellar, improved in pretty much anyway i can think of.
Heavy rain is.....unique. I bought it expecting a fantastic, complicated murder story with a bunch of plot twists and surprising reveals. In the end you get a fairly straight forward story that has a annoying plot hole, (if you see it, I didn't notice it until my 2nd playthrough) but it has very likable characters, and the gameplay is very fun. It truly is a must have.

If your gonna get any of these, I would say get Uncharted 1 and 2, (both cheap now, you will get full story :D ) god of war 3, and heavy rain.
Sorry for so much text BTW.

Valkyria Chronicles - Strategy RPG with some TPS influences and an interesting aesthetic.

Demon's Souls - As anyone who has actually played this game will know, the difficulty here is anything but cheap. You are given every opportunity to learn from your surroundings and enemies before progressing, so every death you incur is your fault alone. More importantly, it's just really fucking fun. Best action RPG I have ever played.

Uncharted 1 & 2 - You know what these are.

Wipeout HD/Fury - Anti-gravity racing with weapons and a bunch of extra modes. I'm not usually into the genre, but I always make an exception for this franchise.

Malicious - Surreal beat-em-up with GLORIOUS visuals. Ten dollars. [sub]also you have to buy it on the japanese psn store and there's no translation[/sub].

Wizardry: Labyrinth of Lost Souls - Crawl you some dungeons.

Folklore - Excellent action-adventure title with some mildly repetitive gameplay and a great storyline. Also, Kenji Kawai. Fucking Kenji Kawai.

Uncharted series, Little Big Planet, Infamous, maybe Metal Gear.

I'd suggest GT5, but it's strangely soulless. I thought it would be great, because I love cars, but it's hampered by its own restrictions. They start you out on some odd 30 cars for free-play and maybe another 20 hatchbacks for purchase in singleplayer. Sounds okayish, still. However, after 3 weeks of playing, I'm still kinda stuck in the first half of the game. There is a difficulty curve that rapidly reaches impossible for anyone who does not actually race cars, and I find myself unable to progress. Besides that, the game is utterly sterile. You get cars, you race cars, there's pretty graphics and nice music, but it seems to misunderstand what a game should be. You think you're buying this simulator game and are going to just hop in a Ferrari F1 car, but it's a huge level-upping thingy. It doesn't think you are worthy of playing it, and hides most of it's 1000+ cars in the shroud of unlocking. Also, the menus are stupidly designed. It is manditory to have an HDTV, unless you want to hold down the zoom button finding the poorly-placed selections. There is a blasted loading-screen between EVERYTHING, and it's teeth-extractingly-painful to change your mind about something, like what car you're using on the level. Plain and simple, the game seems to hate the player...

Before I start listing off exclusives; I had to laugh not to long ago at a mate who had a 360 and was complaining about the constant disk swapping for LA Noir, so my first tip would be, if it comes on more than one disk on 360, save yourself the trouble and pick up a single disk blu-ray PS3 copy instead.

Now, the exclusives:

Uncharted series
God of War series
Little Big Planet series
Heavy Rain
Infamous series
The soon to be re-released ICO and SotC HD collection
The soon to be re-released Silent Hill HD collection
Metal Gear Solid 4

There's certainly others, but these are the top tier games you should start off with.

Portal 2, Demon's Souls, Heavy Rain, and Valkyria Chronicles.

Portal 2 = one of the most enjoyable and original games currently available. It's puzzle based, but the portal gun creates a new experience. The story is simple yet clever, and the characterisation and voice acting are incredible.

Demon's Souls is challenging and therefore extremely rewarding. You have to learn to play the game and can't often complete a level on the first playthrough; you have to go back to it later. The design and aesthetics are incredible, which obviously adds to the overall feel of the game.

I haven't played enough of Heavy Rain to give a detailed opinion, but what I have played suggests it's incredibly dark and consists of a series of clever story arcs. The gameplay is different and surprisingly addictive; you have to press buttons on the controller at certain points (you often have to decide quite quickly) to

The artistic direction of Valkyria Chronicles and its gameplay are both incredible. Whilst the story (so far) does leave something to be desired, it's certainly worth a look into.

I recently bought a PS3 and wondered the same thing, these are the best games going!

Little Big Planet 1/2
3D Dot Heroes
and Portal 2 if you haven't played it.

DON'T get Heavy Rain it's just a long over hyped quick time event filled with terrible storytelling and plot holes. Only get it if you play with a friend and enjoy mocking video games.
