Paper Mario: The Thousand-Year Door

Eternal Darkness: Sanity's Requiem
Fire Emblem: Path of Radiance
Metal Gear Solid: The Twin Snakes
Tales of Symphonia
Star Fox Adventures

Only exclusives I can think of anyway.

Eternal Darkness
Ikaruga
Viewtiful Joe
Metroid Prime 1 and 2
Skies of Arcadia Legends
Star Wars Rogue Squadron II: Rogue Leader
Paper Mario: The Thousand-Year Door
Beyond Good & Evil
F Zero GX

Also get Metal Gear Solid: the Twin Snakes and Resident Evil if you don't have them yet. Both can be called the definitive versions of their respective games.

Was that even worth it to sell a Wii and get a Gamecube, since the Wii plays Gamecube games and used Wiis don't sell for much?

Anyway...Rogue Squadron II is good if you like space combat.

X-Men Legends II: Rise of Apocalypse is a game I have very fond memories of (I remember playing it twice in a row on my roommates Xbox in college just so I give every character ample play time). I haven't played it in a long time though, so I don't know how it has aged.

And...that's all I can think of. I skipped most of that whole generation. I need to go back and catch up on some games from then myself.

Now that you mention it, that is kind of puzzling. The Wii is even compatible with Gamecube controllers and memory cards, so there wasn't really any point to the OP selling his Wii.

Viewtiful Joe 1+2. Awesome sidescrolling beat-em-up games that are chock full of quirky humor, often parodying movies and superhero tropes.

Metroid Prime. Atmospheric first-person exploration/combat game. I love this game, and I'm not even a Metroid fan.

Cel Damage. Under-appreciated vehicle combat game set in a zany cel-shaded world. A group of mismatched cartoon characters shoot, smash, blow up, flatten, or otherwise demolish each other with a variety of over the top weapons (my personal favorite character is Fowlmouth, the gangster duck in my avatar). It's kind of like "Drawn Together" meets a demolition derby (only with milder humor).

Star Wars Rogue Squadron II: Rogue Leader. Fun arcade-style Star Wars flight game. If you've played the original Rogue Squadron you'll have a good idea of what you'll be getting.

Shadow the Hedgehog.

But no.

Legend of Zelda: Collector's Edition (Comes with Majora's Mask, Ocarina of Time, the original NES game, and Link's Awakening)

Why did you sell your Wii and get a used GC? You realize you can plug a GC controller into the Wii and play all of the GC games, right?

Back then I had a lot of fun with Sonic Riders; it's a neat racing game with hoverboards.

No one has mentioned Luigi's Mansion? That game was unbelievably good!

It was recommended already but it bears repeating. Eternal Darkness: Sanity's Requiem. This is the sole reason for owning a Gamecube. Get it immediately.

Eternal Darkness, Eternal Darkness, Eternal Darkness and possibly Eternal Darkness if you're into horror adventure genre. Viewtiful Joe if you're not.

A fun one is animal crossing has a similar feel to harvest moon except no farming. All the other good games are already recommended though I would say twin snakes is awesome. Also although hard to find the The Legend of Zelda: Collector's Edition. It comes with four games including The Legend of Zelda, The Adventure of Link, Ocarina of Time, and Majora's Mask or The Legend of Zelda: Ocarina of Time Master Quest just comes with the original game and a "master" quest which is a harder difficultly.

Resident Evil 4 (vital)
Pikmin (vital)
Harvest Moon - A wonderful life (vital)

Even though you have Pikmin2, it's still a shame to miss out on the original Pikmin - I'd say the original is more enjoyable, less complex, but has the same charm and gameplay. It's a lot less frustrating and still very challenging.

Harvest Moon always annoys me, the 2D visuals that seem to have stayed the same for decades, but this 3D rendition is bloomin awesome. It's got a great plot, while having a lot of freedom, it's just the best Nintendo RPG ever IMO.

Resident Evil 4. Not much I can say about it except that you should already have it. The Gamecube version has a style and atmosphere to it that was seemingly missed in other versions. It's a showcase of how great the Gamecube is - I've played other versions of RE4, and really nothing compares to the GC version.

I suggested 3 games, on top of Pikmin2 and Zelda etc, that's only 6 or 7 games total. But these games are unique, and should not be considered alongside other games. I mean take RE5 on the 360, more powerful machine, co-op... yet RE4 pee's all over it. I've never played a cutesy game on the 360 or PS3 that made me smile like Pikmin, or conjured up the same emotions as I experienced playing Harvest Moon. In all honesty, if I was only allowed 8 games and 1 console for the rest of my life, I'd go for a Gamecube and those games.

Everyone's suggestions are quite good and I'd recommend them as well. I'd also like to throw in Baten Kaitos: Eternal Wings and the Lost Ocean and Baten Kaitos: Origins. Both are excellent RPGs.

Hmm.
Although my Cube didn't suffer the same "expensive paperweight" fate that my N64 and Wii did I admit I didn't buy a lot of games for it. All the same I can easily reccomend the following titles.

Legend of Zelda: Windwaker
Metroid Prime
Tales of Symphonia
Eternal Darkness: Sanity's Requiem
Mario Sunshine (Yeah it's Super Mario 64 with a squirt gun but it's still a decent game)
Pikmin
Final Fantasy: Crystal Chronicles

Lastly, I don't care what other people say...I liked Luigi's Mansion.

Plenty of good suggestions here, but I'll add:

Resident Evil Remake
Chibi Robo (not played it myself, but it looks different and interesting, although it's expensive)
Killer 7
Timesplitters: Future Perfect
XG3 Racing
