Hurray, an anime recommendation where people actually have a reason to merely post their favourites instead of what is asked, because you've asked for anything.

If you wanna try what I like to give people to dispell bad idea associated with anime and open their mind having good plots, go Death Note. I usually request Code Geass after that since it's basicallly the same, but with a more likable protagonist, and more anime cliches, such as high school and mecha, but it shows outsiders that they can be fun.

If you want some mecha:
Gurren Lagaan - Didn't really enjoy until halfway through sinc emy opinion on something differs to others. Once you get used to the Mecha style, if you like Kamina you will feel pumped in every battle, and feel drawn into this super robot series. A genre usually suffering from cheesy dialogue and monster of the week, here makes you believe it. And of course, dat soundtrack:

Gundam 00 - Where I suggest going if you wish to get into Gundam. Stand alone series with decent characters. First HD series too.

Highschool:
Ouran Highschool Host Club - A reverse harem where the main character who's usually an audience surrogate for the fun instead acts as a straightman, making the series fun and comedic for even the male audience.

Baka and Test - I love the use of animation in this series, and the characters. Some very light ecchi elements which are common points of comedy in series like it.

Angel Beats - Mildly action, mildly comedy story about students in the afterlife. Apparently there's many feels to be had.

Action:
FullMetal Alchemist - I'll mention this as well since I feel it's often interpereted as a fighting anime, but it actually focuses more on story. Usual fighting shonen is often driven by "I can't wait for X character to fight Y. It's gunna be awesome". Rather this series just naturally inserts fighting as part of character interactions. I suggest you at least watch the original series upto where they diverge since Brotherhood skips over a bit and makes the beginning lose impact. Even as someone who ahd watched most of the original series I was confused by Brotherhood's first episode since it explained very little.

Ecchi:
Is This a Zombie? - An almost self parodying harem where the main character is a zombie. His random includes a necromancer, a magical girl, and a stern female vampire ninja. Yeah, you heard me. Good for laughs and gets suprisingly emotional at points. Some people think the emotional parts seemed out fo place but I thought it did well to add depth.

The I've ran out of easy categories section:
Fooly Cooly - Short 6 episode series with an almost AMV feel. Very rule of cool.

Baccano - A story set in three different time periods (don't worry they're consequtive years). Set in early 20th century America. Big cast of characters from comedic thieves to crazy murderers, with a plot revolving around immortality. The English dub is dead on with the accents.

Welcome to the NHK - A series that's great for being interesting with nothing but real world elements. Follow the life of a recluse in japan learning the culture surrounding such things, and his journey to break his fear of leaving the house.

I'd mention more because I'm struggling without my collection infront of me. Good luck.

Cowboy Bebop. It's already been said, but hopefully the repetition will convince you to watch it. I'm not really a fan of anime (too many tropes that I find unappealing) but Cowboy Bebop is fairly exceptional. Film noir, action, western, sci-fi mash up with an excellent jazz and funk soundtrack.

OUTLAW STAR - OH THE NOSTALGIA!!!

Samurai Champloo - a good short series

Soul Eater - the ending sucks but everything leading up to its fun

Sword of the Stranger - reeeeeeally good action movie

Highschool of the Dead - stupidly ecchi (kind of the point) but its so damn tense which makes it a really good horror series

Shounen Jump series - tends to be time consuming but the fandoms expansive, good starting point for young'uns

Dude, we could be here all day, just go to a streaming site and click away.

It's kinda like a normal slice-of-life anime... Kinda.

I've only somewhat recently got into anime myself - well, not actually that recently, but I've had a lot on my plate. I've generally had good luck with what I've found though, so here are some suggestions.

In terms of films, as opposed to series, I haven't seen all that many, but by the gods, watch Studio Ghibli's stuff. It's fantastic.

In terms of Series, I have somewhat more experience.

Baccano! - Prohibition-Era U.S. Involves mafia turf wars, quests for immortality, and my personal favourite, a 4-way contest to seize control of a moving train. Absolutely fantastic.

Code Geass - Alternate history where Britain went super evil and is now the dominant autocratic world power (enforced by mechs, obviously). A kid in recently annexed Japan finds himself given limited mind control powers, and seizes the opportunity to build a rebel/terrorist army. This one really sucks you in, although the second time you watch it you'll notice how everyone is hilariously over-dramatic, which is hilarious in itself.

Steins;Gate - A self-proclaimed mad scientist accidentally turns his microwave into a time machine. Comedy gold, with really well-realized time travel to boot, and when it decides to get serious, it does it quite well. Porbably one of my favourites.

Death Note - Been a while since I watched/read this, so I can't be sure how it stands up, but essentially a kid finds a notebook that allows him to cause people to die, and uses it to try to create justice by giving criminals heart attacks and so on. Quickly turns into an intellectual chess match of sorts when he finds himself under suspicion. I had a lot of fun with it, up to about halfway through, after which in retrospect its just not worth bothering with. But really fun until then.

Ghost in the Shell, SAC - In the future, most people are, to one degree or another, cyborgs, but the criminal and philosophical implications of this haven't yet been fully realized. In a world where you can literally hack people, this follows the elite paramilitary organization who deal with these kind of threats. There's also the movies, but I find they tend to make a single philosophical point, whereas with SAC you're able to get invested with the characters.

Cowboy Bebop - This'll show up on a lot of lists. It's not exactly one of my favourites, because most episodes are ultimately one-shots with little overarching plot, but it is quite fun and interesting, and one-shots have their strengths too.

JoJo's Bizarre Adventure is, by far, the best anime I've watched this year. If you do watch this however, make sure to watch the 2012 version and not accidentally watch the 90's OVA.
