God of War 1, Killer 7, Psychonauts, and the Kingdom Hearts series would be good on PS2.

Super Smash Bros Brawl for the Wii.

Dark Cloud and Dark Cloud 2. Both absolutely amazing PS2 games.
This!

but really, Dark cloud was an amazing game, and you don't want to miss on them.

Also, Chaos legion for the PS2. That game is really great for its time.

the .hack series for PS2
MAKE SURE YOU GET ALL THE GAMES!
beating a previous volume allows you to transfer your data to next volume with great bonuses.

oh yes, SLY RACCOON, all three of them. Great character and personality in that series.
Ninjed

But seriously don's miss out on "Sly Cooper and the Thevius Raccoonus". This is a little old, and cartoony, but the mechanics are really good, the aesthetic is great, over all some of my fondest memories from my PS2. I also played the squeal and it is great as well, but never got my hands on the third one.
Seconded. I was going to say you had the wrong name, but my Google-fu saved me from potential embarrasment. The third game is brilliant as well, though not as challenging as the first or second.

Definitely pick up the Sly, Ratchet, and Jak series for the PS2.

For the Wii, I'd actually advise against getting Metroid Prime 3: Corruption. You forgot that the Metroid Prime TRILOGY is out there. Why buy just Corruption when you can get the other two awesome Prime games with it?

If you find Skies of Arcadia Legends (Gamecube) anywhere, get it too, it's awesome.

If you like Turn-based RPGs and feel like searching for a long time, I suggest MS Saga: A New Dawn.
It has something lacking in RPGs now, difficulty. But it's fun as well seeing Chibi mobile suits fight to death.
...
Also there's a Jamaican with purple hair. Just saying.

Hope you don't mind the edits, but that's my selection.

And give Wind Waker a chance.

If you have an XBox 360 or PS3 I wouldn't bother getting MGS3 for PS2 as their releasing the HD Collection in Febuary (out now if your in NA or Japan) unless you want the nostalgia feeling.

Also Red Dead Revolver

Real fun arcadey shooter, but don't expect it to be anything like RDRedemption. This was a good old fun kitchy spagetti western fun with acrtoony characters and craziness from the start.

Also Tomb Raider Legends and Anniversary. (though they are better on PC or 360 if you have the option).

Oh yeah, Donkey Kong Jungle Beat, a very interesting precursor to Donkey Kong Country Returns, you play it with bongo-drums but it's actually a lot more fun that you might think with that premise.

For the Wii, I recommend NiGHTS: Journey of Dreams and Muramasa: The Demon Blade.
I haven't played the original NiGHTS, but JoD was a lot of fun while it lasted, definitely worth the $10 I paid for it at Wal-Mart. It's sort of a 2D platformer, except there aren't any platforms because you fly all the time.

Muramasa, made by the same company as Odin Sphere, is incredibly beautiful and has the prettiest disc I've ever seen (talking the actual, physical game disc here.) The gameplay could stand to be a bit more complex - your two characters are identical in every important respect - but it's worth it just for the visual experience.
