You can read them in order of release, but if you want to stick to certain story arcs it's trickier.

I'm not sure of the order for the Witch books as I'm not fond of them. There are also numerous standalone books that you don't really need to read in any particular order as long as you basically understand what the Discworld is and how it works. I quite liked Going Postal, The Truth, and Small Gods.

Without the quotation marks around the whole thing. I was attempting to find some non-wikipedia information on why the oldest (known) surviving copy of the text is from 1633, a good 40 years after the play was written.

Wikipedia mentions it but has no sources for said information and no discussion as to why.
