OP: I'd look at Gundam for ideas beam claws, beam axes,beam polearms etc. Fpr a good variety try Gundam Wing, G Gundam, or Gundam 00.

How about two light-scimitars, which the "super-powered jedi" dual wields. And he's actually a Sith trying to get away from his eeeevil culture. and the light-scimitars are called Icingdeath and Twinkle.

If this character is so badass, then why not have a crapload of lightsabers orbiting him?
Alternatively, just a regular sword that he makes powerful by focuasing his force powers through it (I think hat was in KOTOR).... and have it disrupt the functioning of normal lighsabers..... or just make this guy the Jedi equivelant of Dr. Manhatten and blow people up with his mind and turn othwer peoples lightsabers in hotdogs.
I think I'm getting a bit carried away so I'll stop there.

A big lightsaber, that needs to be carried by 10 men. It would be used to destroy ships, melt doors and stuff.
..or a little lightsaber, that's used to cut paper.
