Finishing up Initial D Fourth Stage this weekend, so I'm looking for more good stuff.

What I consider good:

Limited-run (no 300+ episode cookie cutter anime... unless it's just unbelievably good)
Intelligent (I don't want the anime equivalent of Spongebob Squarepants)
Overarching story (Don't want anything that each episode is it's own separate storyline)
Mature (not tentacle mature, but then again, a tentacle every now and then can't hurt)

Basically anything that would appeal to an audience older than 21.

I prefer fansub stuff, but can tolerate US licensed stuff if it meets above critera and has original Japanese audio with subtitles.

What I've seen and enjoyed.

Project A-ko
Dominion Tank Police
Fist of the North Star
Ghost in the Shell
Serial Experiments: Lain
Evangelion
Cowboy Bebop
Trigun
Full Metal Alchemist
Akira
Urotsukidoji
La Blue Girl
Cool Devices
Hellsing
Record of Lodoss War
Robotech/Macross
Initial D
Chobits
Love Hina
Wangan Midnight

I'm sure there's more, just don't recall the names right now.

And please, no Naruto or DBZ.

Monster is a very good series although it is around 74 episodes all in all.

-Yu Yu Hakusho (not sure if you would like this, more of an action series. Stories get more mature as the series progresses. I think it's around 100 episodes over 4 sagas)

-Escaflowne (26 episodes)

-X (mature subject matter, 23? episodes)

-Samurai 7 (excellent series 26 episodes)

-Outlaw Star (less mature than Cowboy Bebop, but still lives in a wild west universe. great series)

If you liked Loove Hina, then you may like Negima! (Same artist. Not sure if they've made an english translation of it though).

Also, there's Bleach and there may be a Deathnote anime as well (Not sure though, heard rumors about it).

Actually, believe it or not, I found the first season of Ahh! My Goddess! to be good. I thought it was humorous, and just fun. Not everyone's cup of tea, but I enjoyed it.

Death Note is good, if not a little emo.
Cowboy Bebop is my second favorite, second only to Fullmetal Alchemist.
Ruroni Kenshin is amazing but kinda drags at the end.
Samurai Shamploo is awesome and funny.
I also agree with Abedeus that Great Teacher Onizuka is worth your time.

Those should keep ya goin for a while. ;)

Bleach has too many filler episodes, but the fight scenes are top notch. Death Note was also excellently written and definitely worth a look.

Personally I would suggest Gungrave, which is one of the only good video game to anime translations, if not the best.

And I'm assuming you've been watching Hellsing Ultimate after seeing the original and inferior TV series. If not, you're missing out.

Azumanga Daioh isn't exactly "mature" but it's good fun
Death Note is also good.

There are others I like but you DIDN'T want anime Spongebob so I have nothing else.
