As for recommendations regarding your examples.... I think that you would enjoy the PS2 library of games a bit more. Such titles include: Odin Sphere, the Jak and Daxter series, Okami, the Kingdom Hearts series, and the Tales series. To be honest (from what I've observed) the PS3 is marketed toward the hardcore DUDE demographic (not that that conclusion is written in stone or anything) but it seems to me like the only thing that the blu-ray processing power of that big black monster of a console is mainly geared toward displaying the vibrant gritty realism of blowing someone's face off. (Then again, that's just my opinion. :3 Take it as you will.)
Now, I know I'm wrong and there are plenty of games out there that celebrate the PS3's processing power toward enhancing art direction...I just haven't seen very many (probably because they aren't marketed as often as the big-name games out there...but then again, I don't own a PS3, my boyfriend does.

If you really want games for the PS3 that are focused more so on the art style, I would recommend the following games: the Assassin's Creed series, Final Fantasy XIII, Eternal Sonata, Blazblue: Continuum Shift, Dragon Age Origins, The Elder Scrolls IV, Katamari Forever, Mirror's Edge, the Prince of Persia series,the Sly Cooper compilation, Sonic IV, and the Tales of Vespeira.
