make a limited super power character

I know theres been a billion threads regarding what your favorite superpower would be, but a game/book I am writing is going to prevent the Hulk ,Super Man, Green Lantern, and wolverine type characters from ruining the fun for the more creative super powers by putting everyone on even footing; one power that does "one" thing for you, leaving you otherwise human.
say you wanted to be a pyro, you can say manipulate existing flames basically pulling flame from a lighter but only so fast as your ability to convert the energy is limited, like the guy from X-men. or maybe convert energy in the air into flame causing bursts, but no control over anything other than the direction you create it. and definitely no immunity to fire. see how that makes for an interesting character? he/she would have to be careful to not hit allies as well as not endanger them self in a burning building.
another idea is say the ability to turn any part of your body into rock and back. if you turned your entire arms into diamond, you would sure as hell block any incoming attack, but you would be nose first in the dirt seconds later as diamond is heavy and rocks don't bend despite being arms. and a punch to the face would still hurt if you weren't rock at the time but of course seeing with stone eyelids is pretty impossible. you could only throw punches at human strength with rock fists, again no multiple powers. (I'm looking at you colossus)
a third would say sort of mimic beast boy, you could turn into any animal you have touched, but you are only as strong, fast, and healthy as it was when you imaged it or when you last turned into it. say you were a crow and flew up into the air transformed into a gorilla for a dive bomb attack and landed in the street and were killed by a car, you would revert to human severely injured and lacking a gorilla form until you found another. see..... limited, beatable.
so fellow escapists, I know you are an inventive lot, what can you create within the boundaries? I'm sure some of you can come up with some crazy cool powers, and still work them to where they are beatable by other supers. any really good ideas may make it into my book, so feel free to tell a bit about your character before their power manifested if you like. (don't need the power origin story as it is covered for all characters, sort of like the X-men gene, but happens at random to anyone at any age) good luck, hope to hear some unique and cool powers.

It's a concept that really needs exploring since balanced powers are few and far between in general, so here's what I've got off the top of my head.

The power to control plant growth, but not the form of the growth. This means if the character were being pursued through a field, they could make the grass grow faster behind them to slow their enemy. The limit is that they can't control the plants, so there's no making vines interweave into a solid wall many layers thick. It has limited viability, but it's still useful.

The power to increase/decrease density, but only one or the other. It means that character must choose much more carefully about how they use their power as there's no resetting the values.

And this one has just sprung into my head; empathy. A character can feel what those around them are feeling allowing them to spot suspects, aggressors or whoever with ease within a certain radius. The downside is that it's always on and they can't dilute what they're feeling. Say they were in a bustling train station and their radius of effect was 10 feet. That's a lot of people and a lot of emotions to feel at once and they won't all be good.
