Hey, it's the time of the year for us in the north east to enjoy fresh maple products ! i know that the production is very limited geographically, but maple product are enjoy around the world. So, do you consume maple products where you live ? what do you prefer ?

i really love syrup of course. pretty much everywhere, in ice cream, in my coffee. i replace parts of sugar for maple syrup in my jam, it's nice on hams and ribs too...

for information, i will resume the main products :

Raw from the trees is the maple water. it's water but with a subtle taste of sugar
heat it, and you got a reduction (reduit in french, not sure if there is actually an english word for that): a bit brownish color, the sweet taste is stronger. better served hot.
heat it again, and you got Maple Syrup. the most know product.
heat that again and you get Maple Butter. it have the density of almost melt butter. great to spread on toasts, or spread it across a pancake and roll it.
heat that again, and you get mapple toffee. The traditional way to eat that, is to pour it hot on the snow, take a wooden stick, and pick it up on the snow. it will stick to the stick and you can eat it. very very good, very high sugar taste.
heat it again, and you get soft maple sugar. it have the density of fudge. usually eaten like a candy
Heat it a last time, and you got hard candy.

God I hate this time of year. I live on a street that has 7 sugar shacks, and not the small traditional ones either (well 2 of them are) but the big "hundreds upon hundreds of guests can attend" types (the other 5). We get more traffic on the road this time of year then the rest of the year combined, and you burbs and city folk have no idea how to drive in the countryside. Looking out my living room window right now I can literally see a cop car's lights down the street where someone drive into the ditch.

That being said I enjoy the maple. My neighbour and my lot have trees and he lets us tap his trees (we have an agreement where we take care of his lawn and in exchange we get the lawn trimmings and dead leaves to use for mulch and to tap his trees since he never cared for them and our other neighbour who used to do so moved after his house burnt down). Because we use a different method for how we boil it there's a noticeably different taste and consistency, but that's not to say it's better or worst then the other stuff, just different. And we get enough to last the year (we've still gone some cans from 2016's haul).

So that at least makes it easier to deal with this time of the year. That and the fact Snow Taffy is only really available this time of year and it's amazing helps.

You Europeans and Americans from outside the North East really need to try this stuff at some point. You haven't lived until you have.

As unlikely as it was, part of me really hoped this thread would be about the mathematical programming language Maple [https://www.maplesoft.com/products/maple/].

OT: I have only ever had Maple of the syrup kind with pancakes, and that was only once during my trip to North America.

I'll get maple syrup with my pancakes and waffles, but I don't eat either of those often.

For me, Maple is just a tree.
Maplesyrup(?) is something we have here but otherwise I know of no mapleproducts. I might of course just be an ignorant twat who doesn't know what he's eating and drinking.

Okay so you know those stock photos of the couple in the warm cozy cottage while it snows outside? They're in the mountains, there's a fire, and they're both just enjoying each other's company?
That's what warm maple whiskey with cinnamon and just a whisper of ginger tastes like.

The only maple thing I ever enjoy is the stuff in bottles that you put on pancakes or french toast.

It's just not a major thing around here, now, salsa on the other hand...

Normally I'm against super sugary hard liquors because they normally lead to pain town the next day, and I get lost there for a while.

That said, that sounds amazing and I want that in my mouth.

You'd besmirch delicious pancakes with Maple Syrup?! Pancakes are for absorbing the yolk from over-easy eggs, and the grease from bacon!

It's especially good when the melted butter mixes with the syrup.
