This.... this sounds interesting. I like the idea.

On the topic of the lawful good paly, I think the best I saw was with a group that were planning an ambush of a small goblin camp at low level. Thief and ranger wanted to sneak in and kill some before they were noticed, and the wizard was ok with it. Even the cleric was like "well, they ARE evil monsters so my god will be happy as long as they are dead." Paly was being expected to be against it though, so they tried planning it out of earshot. Player with the paly rolled a perception to hear and won, and you could practically hear the table groan about what they expected. Paly headed over and she basically said "I heard you planning something dishonorable, and I can't approve. If you did it I would be very disappointed, both that you would do something underhanded like that, and that, tactically, it would be more effective to target the shaman and not the watchtower guard first. Now, I am going to go over here and pray to myself and leave you to think about what I said. If you end up in combat by mistake though, just use the signal whistle and I will come running and engage in honorable battle."

They could have easily been annoyingly meta about the way they were willing to let the plan happen, or just stonewall "I am law!" mindset, but I loved how it felt like something a worldly paladin might do, knowing full well the world itself wasn't always fair combat.

Lots of people are interested. It looks like we won't have so much an adventuring party, but more of a mob.

Yeah, that's a very good example of how to play a Paladin, what is important is weighing in what's more important your, code moral values or even efficiency and finding a compromise between those things, I would say that they are the hardest class to RP but they aren't as hard to RP as most people think, at least if you are someone that understands that morality is not black and white, but in 5E there are no alignment restrictions and so long as you respect your Oath & you God's Dogma you should be fine.

Sure, anything is OK with me but I do pay attention to racial perception so do be aware that you will be treated poorly by most common folk if you choose to play those races, this isn't to discourage you, it's simply that when I play a character I want everything that comes with it, race should be chosen for both it's flavour and mechanics it's a complete package, read the green box on page 43 of the PHB to know more or less what to expect.

It is most certainly a concern, I'm sure it can be handled but progression will be slow and this will force me to either divide you into groups and have you go in different connected adventures or to craft an adventure designed for that many people or of course if someone else is willing to DM we could try multiple interconnected adventures but with 2 or more DMs instead of just one.

But since I'm a guitarist I can probably let the bard thing come in its own
Paddle hmm... I'd say it counts as an improvised weapon which would be 1+STR modifier non-lethal damage or 1d4+STR if you have Tavern Brawler feat, and I'd say it doesn't count as a Monk weapon in case you have a level or 2 of Monk.

This actually makes me more eager to play a Tiefling, I can see a lot of good roleplay opportunity with people mistrusting him for his race and either trying to prove that he is more than his race through deeds and behavior, or try to ignore it and not snap on a commoner over some insult, and be reminded why he is a ranger who generally avoids town to begin with.
