From Jak & Daxter 2. Daxter is an outrageous character and says a lot of funny stuff, but this is the one that stuck for me.
Not sure if this technically counts as a quote since the punch line isn't dialogue but i find this part from the same game even funnier:
Daxter: "Don't worry Jak, i'll save you before you know it"
(scene change) 2 Years later
Daxter: "Trust me brother, there aren't enough hours in the day"
