Depends how dumb you want your MGS.

MGS is kind of dumb but the world has some sort of rules to it.
In TS, Snake does backflips off of rockets and other really dumb stuff, there's no consistency to what is and isn't possible (which is something I hate in both movies and games).

MGS1 has the better voice acting for the most part (and less over the top cutscenes), TTS has the better gameplay and graphics. I personally prefer MGS1 myself, but granted, I played it long before TTS.

I honestly didn't have a problem with the Twin Snakes version but I do prefer the PS1 version just because it was the one that I enjoyed first and played the most times.

I'd go with Twin Snakes, since it includes mechanics from MGS 2 that weren't in MGS 1. I've also heard that the Graphic Novel on Amazon is a good place to start.

I haven't played the GC version, but it seems to be the superior version, as it seems to have everything the earlier editions had but with better graphics. The PS1 version is better than the PC version. The PC version feels unfinished because the original version (PS1) relied a lot on framebuffer effects, which the PC version doesn't have. Aside from graphics, the versions are identical as far as I know, although the PS1 version has 2 editions, one of which contains more virtual missions.

The PC version is scarce and a legit copy is very hard to find. I think you can get MGS1 on PSN and maybe Nintendo's digital store as well.

I like both the original and Twin Snakes, though they are a bit... different. Specifically Twin Snakes is more over-the-top. I have a personal head-canon to explain this, and I know I'm not the only one:
There is a character who says during the game that she wants to make a movie based on the Shadow Moses incident. The way I see it is that the original Metal Gear Solid is how the events actually took place, while Twin Snakes is that movie.
As to which one you should play, you can't really go wrong with either, though the original is a somewhat easier to find.

I'd say the original, if only because it's only $10 on PSN and Twin Snakes is most likely difficult to find. But other than that you can't go wrong with either, though they have some relatively minor differences that may influence your decision:

For one the music is definitely better in the original, although Twin Snakes soundtrack isn't terrible. The voice acting was also completely redone for the Twin Snakes, most notably with Naomi and Mei Ling losing their accents (They also no longer have their accents in MGS4 if that counts for anything) and some various lines having been cut and some new added, but again nothing too major. Twin Snakes also has some added gameplay features from MGS2 which give you more options, but things like the tranq gun and first person aiming can make the game significantly easier should you choose to use them. Also the Twin Snakes has new cutscenes which many fans found too over the top, (Snake back-flips over bullets and jumps off an incoming missile) although after playing the other games in the series I'd say that's fairly tame in the crazy department. Lastly Twin Snakes has better graphics, sound quality etc. and slightly refined controls.

Oh, and the Twin Snakes doesn't have the VR missions from the original, hope that all helps!

I'd go for Twin Snakes simply for how the cutscene action got ramped upto 11 for over the top silliness.

Mind you, both have Cam Clarke hamming and camping it up as Liquid, which to me is the best thing about both games :)

Get the PS1 version first, because it has better atmosphere and voice acting. It has a lot of small touches in the dialogue that is removed in Twin Snakes.

Both Sniper Wolf fights, with the second one being so ludicrously frustrating that I had zero sympathy left for her in her final moments last time I played it. I remember never even needing any pentazemin back when I was a kid, but now the aim feels like I'm a 90-year old man with Parkinsons.
Wait... You're supposed to be using a Sniper Rifle against her? I just stood in a corner and used NIKITA missiles.

Yeah, I heard about that trick, but I assume that's only possible in Twin Snakes, because in MGS1 you can't direct the missle upward, so it always slams into the hill where Wolf is perched. I've tried and it doesn't work in the PS1 version. Unless I'm missing something obvious.

It works in both versions. The Missiles can't jump ledges, but they do travel up the slopes at their side of the area.

I played them back-to-back when I first got into metal gear, and it might sound sacrilegious, but I honestly preferred the twin snakes. Keep in mind, my first one was MGS3, and tbh, the more over-the-top presentation, and the graphics/gameplay more similar to both MGS 2 and 3 just made it flow better for me. Plus, the original version gets simply infuriating when it comes to certain parts, like the sniper battles Shinji mentioned.

Can confirm this. I beat her with missiles too. Although if I recall correctly if you fire them straight at her she just shoots them down so you have to go around and hit her in the back with them.

I personally haven't played through Twin Snakes since it came out, but I remember not being a fan of the redone voice acting and the over the top cutscenes. Though my tastes in silliness and action scenes have changed since, I'd be willing to give Twin Snakes another shot.

That all aside, I still can't help but recommend the original over the remaster. The first person aiming, destroying camera's with gun fire, and other gameplay changes break the challenges that the original had. You get a real sense of how broken the new gameplay is when you get into the Tank Hangar, you climb out of that vent and you effectively eliminate every threat in the room without even moving.

Have not played Twins Snakes yet but I have played MGS and it has not aged well. Its hard to see basic textures and makes my head hurt. So assuming Twin Snakes is a competent port I vote that. Shameful that I do not yet have it myself given what a fan of the Gamecube I am.
