Make a castle... but here's the catch.
Make it out of the most ridiculous thing you can think of.
My wool castle remains the fluffiest military hardpoint in all the lands. And the thirty seconds I can stay inside my cactus castle before bleeding to death is lovely.

Make a bunch of skyscrapers and connect them all with a minecart transit system, going through each building. Mess around with redstone to change destinations at each building hub, or something.
That or what I'm doing now is exploring through Nether gates to find new areas and colonize them. Great for gathering resources in designated locations and simply using on large hub for construction- as Nether gates usually transport you FAR away per step taken in the nether.

A massive glass structure filled with Lava, serves as an awesome land mark. Just have a lot of buckets handy, and don't fall in when you're grabbing the lava. Losing 20 buckets hurts.
I have a glass star about 50 blocks high filled with Lava. It took quite a while, but not too as I don't have the patiance for the huge projects people undertake. I like to just run off and build houses where-ever I think the terrian looks cool.
But yeah. Lava Star.

How about building a giant statue of yourself and your lovely buildings out of. Maybe with diamond eyes or a golden fly zipper, or something like that.
Then, build a giant creaper, fill it with dynamite, light the fuse, and shout as everything explodes "I KNOW YOUR GAME, MINECRAFT! I CAN DO IT BETTER! HA HA HA HA HA HA HA!!!!!"

You should do what I'm doing.. Go to a server and booby trap the entire map with tnt without anyone being the wiser.. and when you're ready.. Detonate it all in a blast of fiery griefdom..
take your favorite 8 or 16 bit game, make sprites using colored blocks.
