For me, this would have to be the Metal Gear Solid series. I've just recently played and beaten MGS4 (not having played any of the previous games) and I feel as though I really missed something. I'm actually planning on trying to go back and play through the old games, and I'm hoping that I'll still be able to get some enjoyment out of them.
They're generally the same game (except for MGS1 which has a top town only view of everything, no over the shoulder shooting), with different permutations. The cutscenes in MGS4 are replaced in the previous games with Codec discussions usually.

System shock one I can't seem to find :S. Sys Shock 2 I'm upset about, I tried playing it again, the graphics weren't the problem the game mechanic was. I couldn't get over the fact of repeatedly spawning 'zombies'. I still regard it as one of the best atmospheric games, even better than L4D.

I feel sorry for anyone that hasn't seen Doom or GoldenEye when they were current.

I really regret never owning a NES and getting experiences like Mario Bros. 3

morrowind for me. My friend liked it better than oblivion but I played oblivion first and for the life of me, i cant get past the graphics. this is particularly depressing to someone like me, an avid retro gamer.

System shock 2

Civilization 2
(Interestingly, I've played Alpha Centauri just after Civ3 rather than Civ2)

Battlefield 2
(Strangely enough, I've played both BF:1942 and BF:Vietnam from release.)

Operation Flashpoint
(Definitely gonna catch OF2 as soon as it gets released.)

...and lots more.

System Shock 1 and 2, Planetscape: Torment, etc...
Basically, I miss out on a lot of stuff.
I played System Shock 2 for the first time last year. It may be a bit on the ugly side but the game is awesome. There are some mods to make the textures on the enemies better and other stuff. Go nuts if you can find a copy.

Most of the games mentioned here though, I actually played back in the day. And Planescape Torment still looks pretty nice. I don't see why anyone should miss out on these titles just because of dated graphics. By that logic I shouldn't be able to enjoy Super Mario 2 on the NES. I've never played it, but if I turn out to hate it won't be because of graphics.
I can ignore graphics, but finding a copy is a *****.
That sadly is true. If ever a game needed to be released on Steam it's this one.

Ico and Disgaea 2. For a while Xenosaga III was on this list, but thanks to the magic of Amazon, it isn't
ICO is still playable and available - It was re-released before Shadow of the Colossus so shouldn't be the prohibitive £60 it was before. Maybe a friend owns it. I play this every couple of years and I think the graphics are still passable. Not great on a HD TV though.

Still I can't recommend this game enough. If you played Colossus, ICO is it's suggested sequel even if it's a step back and potentially the Trico (Team ICO's third game) could follow on the story.

Is it just that you can't get hold of it?

I wish I had been born 5-10 years earlier, so I could have played, and enjoyed Half Life 2, and WoW pre Expansion.
Did someone give away the story because I don't think it's that old is it? Half-life 2.

Since everyone seems to worship FF7 I probably should have given it a shot but that game is IMPOSSIBLE to find. But I haven't really tried that hard anyway.
There was talk of a graphical update. Even if that doesn't happen you'd think the Sony would put it on PSN, because all PS3's play PS1 games - they'd get some buyers and maybe sell a few more units.
I think SONY should release loads of PS1 titles on PSN but they're aren't releasing the big ones.

I see Suikoden is available in America for the PSP but I think I can't buy it because I've already paired my PSP to my English account and may not be able to play.
A PSP version of VIB RIBBON where it plays the songs from you folder would be awesome.

Yeah but compared to games nowadays its standard, and more then a bit dated, whereas when it was originally released it had groundbreaking physics and graphics.

Left 4 Dead. Looks cool, but I don't believe I game that much to justify a 60 dollar purchase.

Fallout Tactics. I played a demo and loved it, but it seems to be rarer than refined Caeseium these days...

Deus Ex, System Shock 2, Planetscape: Torment. Played Deus Ex a few months back but the old graphics make me want to kill something pretty, say Far Cry 2.

I guess it's different where you live, but I've only seen it in one store, and even then, only twice, end even then, it cost $100. I don't have a credit card, so ordering online isn't a very convenient option for me.
