It, like all fandoms, varies from person to person as to why they watch it. Some like the kind morals, some the stories, some the characters, the jokes, the writing, etc...
I'll jump in, and explain why, at least for me:
-Morals: Now, the morals are things that I, as an adult, don't need explained to me. Yet, critiquing their method of delivery, I think they're well done - I'd have no problem letting children of my own (if I had them) listen to them. Good morals that don't feel preachy in their delivery.
-Characters: While the show isn't without weak links (cough*Starlight*cough), taking a look at the Mane 6 in particular, they're all perfectly likable and dynamic. True, every main character is an archtype when you get down to it, but they're still archtypes with layers, character flaws, and to an extent, character development (Fluttershy's a bit more assertive, Rainbow Dash is less brash, Twilight less socially awkward, etc.) Over the last six seasons, while every one of the Mane 6 has remained in their archtype, they have developed to various extents. And we've got good characters outside them as well (Trixie, Discord, Celestia, Luna, etc.)
-Music: The songs are great. There's a few duds, but all in all, they're very well composed and fun to listen to.
-Writing: There's a few times, especially in season 1, where the writing does get a bit simple, and clearly designed for children, but for the most part, the writing is engaging enough for me as an adult. Basically family-level - no swearing or anything, but it's not patronizing or anything.
-Worldbuilding: Very minor, but Equestria does feel like a genuine setting. Not nearly as fleshed out as other cartoons (e.g. Avatar), but credit where credit is due.
-The "Fun Factor": I'd say this is the main factor for me. As an adult with various shifts and housework, and who hasn't sat down for 'Saturday morning cartoons' in nearly two decades, there's still a need of sorts for this kind of entertainment for me. 20 minutes of undemanding, yet still entertaining animation, that I can enjoy mostly unironically. There's certainly better cartoons out there, but I can enjoy MLP for what it is - children's entertainment that manages to be well written and engaging enough that I can enjoy it as an adult.
