I found most mods like camping, going hungry and having to eat, dying of cold, etc... made the game tedious instead of fun. Their novelty factor wears off after a few hours, that's my experience with all mods, whether for Skyrim or Fallout 3. Once I install a mod I go "OMG why didn't they implement this in the vanilla game", then a few hours later I go "Oh right, that's why" and I uninstall the mod.

Even texture mods I don't use. The early ones actually made Skyrim look worse, and while the current ENB ones look great, the intermittent cell-load stuttering they introduce makes the game unplayable.

The only better thing I found with the PC version over the console version is 60 fps, in terms of immersion that makes a world of difference to me. But that's about it.
The ones you listed are only graphical mods or mods that affect gameplay in major ways. Minor mods that change little things but make the game much more straightforward are far better, and soon you can't imagine life without them. Such mods include Lightweight potions and poisons (potions and poisons only weigh 0,1 instead of 0,5), faster vanilla horses, stones of barenziah quest markers, auto unequip arrows (helps the immersion a whole lot), mine map markers, non-linear perks etc. If you honestly consider the PC version's only advantage the 60 FPS, you've missed out a whole lot.
All these small gameplay-tweak mods really depend on taste. There's reasons things were made the way they're made, Vanilla Skyrim is made by people with more than a decade of experience and whose profession is to keep tweaking a single game over many years to see what fits best with the gameplay. These kinds of mods on the other hand are made by random people in their free time over the course of a week at most.
When why the hell is the standard UI so crap compared to the likes of SkyUI?

The ability to sort my inventory was a godsend when it came to dealing with loot. And the less said about the default favorites menu the better.
It's all about taste.
It never even occurred to me anyone would have a problem with the UI until I saw people on the internet bitching about it. I actually liked the UI a lot.

I love playing modded Skyrim. With the Memory Patch my Mod manager is packed full of mods. As far as 'realism' mods I have generally stayed away, but in my most recent playthrough I am using Realistic Needs and Diseases. With a few tweaks I have found myself really enjoying the immersive aspect of it. Planning out my path and where I will stay the night has proved more interesting than I thought it would be and now I don't feel like a quest completing robot anymore.

The great thing is that even though I don't like Frostfall, there are mods like Wet and Cold which adds to the feeling about a 'cold' environment without the gameplay getting in the way.

Anyone saying there are not great and stable mods for Skyrim hasn't actually bothered looking. I'm not going to say modding requires no effort whatsoever, but currently using mods in Skyrim are not as hard as some people make it out to be. That said it isn't always as easy some people say either.

At least for me the pros far outweigh any cons.

I hate to ask but I've just downloaded the whole list and I was wondering, how 'dare you enter my magical realm' is this mod?

EDIT: just thrown the amulet away and proceeded to fuck everyone in Dawnstar so I'm going with very. That's uninstalled but staggering to Dawnstar and having to make two stops to warm up was brilliant.

AP mod is so goddamn creepy, but frankly half of the mods on skyrim nexus are so sleazy and creepy.

OT: tried the immersion mods for awhile, and while they were good the mods kept slowing down my game, even went down to 7 FPS at one point. So, i uninstalled the immersion mods and am now enjoying driving around with my vintage mustang, enjoying the view of the surreal fantasy style landscape, while escaping from various creatures, dinosaurs and Thomas the tank engine dragons with my horde of handsome followers.

The GEM list is a really good way to start.

Personally, I've found myself playing Frostfall, with no fast travel and a map without a player marker.

Quite fun.
