a boss attack that is an area attack, has large range, hits all around the boss, even behind, and knocks you down. that and poison

Instakills and regenerating health. OH and B.S status ailments and being immune to everything and invincibility and time limits and in some games like FF12 casting death summoning other enemies or blocking everything.

Nah, this was in Vampire the Maquerade: Bloodlines...person turns into a giant many tentacled beast to attack you, and tentacles that get broken off grow into similar beasts using the same model, though takes a while before they get big enough for it to be confusing.

Fortunately, I was using a mod, and having my minions run in and attack the thing while I machine gunned it (it was big enough I could shoot it without risking hitting them) worked well...first time I tried, they jsut stood around occasionally shooting it while it went after me, so I reloaded, levelled up a bit and gave them new orders.

It occurs to me now that one of the minions distracting the tentacle beast was a Japanese schoolgirl that keeps flashing her panties. Huh.

There's a lot of things
First things that come to mind:
knocking you down continuously so you can't get up(any old fighter)
one hit KO(Punch Out)
Overpowered, requiring you to level up or bring in help(any RPG Boss or game focused on MultiPlayer)
being too easy..."that's a boss?"(I don't have an example..but that would just be sad)

You nailed it right on the head, OP. Other annoying tactics include: circle strafing, unpredictable movement, and unavoidable attacks.

Being knocked down with no chance of getting back up(I'm looking at you, Cenolia/Celobia >>), and bosses that perform a sudden spike heal.

Quick bosses which have invulnerability from the front and a tiny weakpoint on the back. Having to both juke them out and traverse a map just to shoot at them is rather annoying.
However the most annoying things have really already been mentioned. Healing, spawning minions, or even both, spawning 5-6 defensive or evasive minions and the boss itself becomes invulnerable until they're dead while healing.

Then there's also a beginning-mid game boss, becoming a regular enemy later on in the game.

But probably the worst thing a boss can do is knock you down and not give you a chance to get back up again. They just keep on hitting you while you're down, which is totally unfair. If you're lucky and they back off for a couple seconds, you might be able to get your character's animation to run so he's back on his feet. I don't need my hand held, but really, that's just stupid.
Yeah, this was what I was going to say too. Especially if they hit you with a knockdown, take five seconds to get back up again attack AND spawn minions to mob you at the same time. There's nothing more annoying. It makes you want to slap your hero for apparently needing a chairlift to get up to their feet and for having no capacity to, I don't know, ROLL OUT THE DAMN WAY OF AN ATTACK.

Basically it just gives you a period of time where you're not in control of your character at all and can't do anything at all to defend yourself, especially since the attack that knocks you down and stuns you like this is usually unavoidable or unblockable.

Die, when a boss dies the game is over. Make the boss keep turning into smaller versions or something like a nesting doll. All game makers need their bosses to work like this.

Four boss versions in one flash game, lets see some effort game devs. I want a game that is one boss fight, Start out as big as a collossus and don't stop until you have to finish him off with a boot stomp.

The timer was the smallest problem with that guy. I pwn everything in the world, killed a GIANT FUCKING WORM the size of a small skyscraper, and am essentially Pestilence incarnate and you expect me to believe that some git I've beaten three times already can take all my hits without flinching once? I resorted to using my adrenaline moves because you couldn't fight him any other way.

Edit: Oh, and that's the last thing I did on my XBox. It red ringed that night when I wanted to switch to Assassins Creed 2. Worst New Years Eve ever.

Hmmm you know multi stage bosses would be cool if each stage had a something that made it unique like example

1st stage -100% to 70% Boss regenerates health at a rate that is not too fast but fast enough to rush the player and throw them into another fighting style. Boss cant one hit kill and also does not do much damage to the player unless the player is too slow and lets the boss hit them constantly. Boss is fast and can dodge but will not always. Boss does not block

2nd stage -70% to 40% Boss losses healing abilities and becomes more defensive allowing player to be more aggressive and able to plan attacks better. Boss still can dodge and will block attacks that are similar meaning that the player can not just spam attacks. Boss is more sluggish but only enough to hint the player to attacks. Boss attacks hit harder. Ranged attacks are sometimes deflected.

3rd stage -40% to 10% Boss begins to lose health slowly meaning player can now attack to finish off or defend and run the clock out. Boss is very aggressive and attacks do the most damage as the boss wants to end the fight. Boss is even more sluggish making avoiding attacks easier. Boss gains ability to counter if similar combos are used in succession. Ranged attacks become deflected easier. Boss attempts to steal life from player or surrounding objects. Boss will use distractions to fool player into letting guard down.

Death stage - Last 10% of health boss continues to lose health but attempts to heal by using healing items which can be canceled by player causing the boss to drop items resulting in players being able to get small health boosts. Boss uses primary ranged attacks that deal same damage as 2nd stage attacks. Boss counters easier. Boss uses stun moves and combines stun and heal to gain health. Boss loses most control of powers or special attacks. Boss will be hard to hit but each hit will cause damage regardless of block. Blocked attacks do small damage that can be used to drain health. Back up arrives for boss allowing him to heal to 10% maximum. Minions drop minor health or ammo. Very small number of minions. Minions also have small amount of health

Having attacks that require insane luck to dodge. Case in point the Boost Guardian from Metroid Prime 2. That's just one of the many ways that bastard is a stupidly hard mini-boss

Use crowd control on me. I find that taking control away from the player pisses people off and is quintessentially the opposite of playing a video game, which is what the player payed money to do. When designing a game you should think of challenging mechanics that will actually be fun.

A) Stun lock you
B) Then proceed to heal itself

It's why a loathe the Maneaters from Demon's Souls. Gargoyle Demon from Dark Souls was alright though, as long as you kill the first one fast, the second one was cake but the Maneaters had way too much health.
