Most of my favourites have already been mentioned. Arkham Asylum, Condemned, Dark Messiah, Metal Gear Rising, Chivalry: Medieval Warfare and even The Last Of Us despite it not being a melee-focused title.
But here's two others for your perusal.
The first is Zeno Clash:
In the midst of all the environmental weirdness is a flawed but oh-so satisfying first person brawler. It feels so damn fine to throw people around with haymakers and uppercuts, with those delightful Source engine ragdoll physics.
And the second one, while barely having a real combat system, is One Finger Death Punch:
I have yet to find a game that beats OFDP in terms of sheer kinetic satisfaction. It's like a prolonged orgasm in game form. Or a ruined one if you're terrible at it. But good God is it satisfying when you nail the timing. And all of that with just two buttons.
