The Wolf Among Us. Seriously. The first thing I said when I started up the game and hit play was "It isn't all grey and brown!"
The environments are just so colorful! It's great!

It's a game about 10 seconds prolonged into 10 minutes.
Yes the colour palette is similar to Journey. But it's beautiful whilst it lasts.
I guess it's not really that much of a game since all their is is exploration. But it's damn pretty.
Thomas was alone, love the lighting effects and art style despite it being a very "simple" game in design.
Dear Esther, some of the locations look fantastic, whether you like the gameplay or not.

Terraria, I just love the lighting effects in the game, especially with the new update's lighting.
Kentucky Route Zero, looks so beautifully-eerie. It really gives you that feeling you get when you're driving down some long stretch of peaceful road at night.
Grim Fandango, especially Rubacava. The game's graphics haven't aged that well, but it still gives you that amazing feeling of beauty, swing and hep cats.
Special nods to some of the FF games, PoP 2008, LIMBO (beautifully grim) and Fez
In terms of pure aesthetics, I've been playing Muramasa: Rebirth lately and man that game is gorgeous. The color schemes and the quality and quantity of the animation is astounding. Here's a screenshot I took today:

I really have a thing for bright, contrasting and discordant solid colors.
Other similar styles I like include Super Meat Boy and Bastion.
Fallout 3: The very first time you walk out of the vault and adjust your eye's to D.C. = Awesome
Dark Souls: Rough graphic environment is pretty awesome, plus the cut-scene to Anor Londo makes me want to grant wishes.
Diablo 1: Remember that shit.
Beauty in games is a secondary for me, but I will never ignore it.
The most beautiful game I ever played was dark souls. The focus of that game was overcoming challenges, everything else was built around that central idea. Every location is different, yet every location is sad, it is a world of desolation and despair. And you're entire journey through Lodran is like that. Even the beautiful city of Anor Londo is just a forsaken city abandoned in rays of sunlight. But throughout it all you have the multiplayer aspect which always shows that you're not alone, you're alone in your world, but you always know that there are others just like you, trying to make their way through as well. Step by Step, leaving helpful advice or tricking you into your demise, you always feel part of something greater when in that game. The gameplay is always the same, but the tactics you need to use to overcome each section is not.
After getting a 3D monitor and glasses, I orgasm'd playing through that game again in 1080P 3D.
To me Knights of The Old Republic 1,Red Dead Redemption and Skyrim are beautiful games because there's much depth in the exploration,combat,map design,characters,lore and story to the three games listed above.
This is hard because not only is art direction important, visual storytelling is also a huge factor. For example, most people would say that visuals are one of KOTOR II's weak points, but I find that the game looking like a darker, dirtier version of the first game is thematically appropriate; the game almost looks like it's had all the life and color sucked from it. If you've played it you know why that makes sense.
This is why games like Dark Souls and Fallout have appealing aesthetics; ugliness is appropriate given their atmosphere. So I'm not really sure I can answer that question. The Witcher 2 is a beautiful game, certainly better looking than my above examples, but The Witcher 2 is beautiful simply for the sake of being beautiful, which ironically leaves less of an impact than the purposeful grime of Dark Souls.
I'm actually gonna have to put down Dead Space 3 as my most recently beloved game for it's sheer gorgeousness. Say what you will about the game, on a large flat screen tv in a dark room at night in HD the space stages were jawdropping.
I'll give a nod to Rage too, it was very pretty... if the textures decided to load.
Trine 2 and Assassin's Creed 2. I think those games look marvelous. AC2 is not about the graphics as much as it's about the atmosphere. Especially in Venice.
Assassin's Creed II, I'd stand Ezio on a roof, and watch the day go by, the suttle shifts in light, the shadows on the buildings, the noise from the street below... if that ain't beauty I don't know what is!

I'll have to go by genre. For first person shooters...obviously Crysis 1/Warhead, followed closely by Crysis 3. It surprises me how those games have hardly been mentioned so far. Either people's computers aren't up to par and can barely get Crysis games working, or they have somehow managed to miss-out on some of the most beautiful games to date. These days a midrange PC can run it on max settings, plus Crysis+Warhead costs around $5-10.
Games like Skyrim, Bioshock Infinite and Far Cry 3 are quite pretty, but come on...this is Crysis. CRYSIS. People have trouble picking up their jaws off the ground when the game truly opens-up in later levels, I think I lost track of time as I simply went running around the tropical/jungle setting. There are some areas where it's sometimes difficult to tell the game apart from real life.

For MMORPG's, I'll have to say Guild Wars 2 hands-down. That game has an absolutely spectacular art direction, color palette, draw distances, etc and the environments literally breathe with life. The game has been commended with having some of the most immersive environments ever in an MMO. The capital cities and forest/waterfall zones especially are nothing short of incredible, the visuals are worth exploring - it's an explorer's game!

Platformers next, I'll have to go with Trine 2. Shouldn't really have to explain too much, I mean look at this...
It's a Wii game, so it's technically lacking, but they more than made up for it in style. The vibrant colors and the space backdrop work very well together.
