Making trucks the A-Team would be proud of in Garry's Mod by bolting wheels to a dumpster. Adding rockets only made it funnier.

Also, creating my own little storylines in GTA4 was a whole load of fun.

In Fallout 3, swimming in the sea of radiation, known as the Potomac, is fun, 'cause there's lots of stuff that nobody knows about down there.

OT: As mentioned above, Fallout 3 is fun for that kinda thing. Like causing a massive explosion by shooting a Bottlecap mine that has been left on a large pile of deactivated cars.

There's boxes on the bottom of the Potomac that have extra bullets, and sometimes they make the difference between life and death.

Ages ago, but it was the first Tenchu on the PSX. There was a debug mode that allowed you to play as enemy characters, use their weapons, and even play 2 player on 1 screen. It made what was already a near perfect game that bit closer to being absolute.

I don't remember what I did but one day I started to play oblivion, I see a bunch of dead bodies around me and I'm like oh wtf. Next thing I know a guard runs up to me and I'm apparently wanted for 140 charges of murder, 30 charges of resisting arrest, and multiple charges of what I'm sure was every crime in the game. Best night of drunken oblivion revelry ever. Am I the only one who thinks sandbox games get 1000x more fun when you're drunk ?

Best I can think of at the moment.

It was last time I played Fallout 3. I was walking in some ravine or something and I saw an Albino Radscorpion coming at me, so I threw down a mine since it would be forced to go over it because of the tight space we're in. It gets over to the mine and just stops. Somehow the scorpion was aware of how mines work. I had a stand off for a bit with it, nothing happening. Then the best part, another scorpion comes up behind me and hits me in the back, I get sent flying forward, the first scorpion runs forward and hits me again while triggering the bottlecap mine, the mine explodes and I die.

I got flanked by fucking Scorpions, and all I could think was Clever Girl..

I was just playing Prototype. I first climbed up to the Empire State building. I then dropped myself down onto a car. I picked it up, dropped my disguise threw it a helicopter and used the Whipfist to kill all the the civilians.
The free roam is better than the game itself.

Epic Fun.

GTA4. Picking Michelle up in a helicopter, landing on top of the highest building around, and pushing her off is so great. There are simply no words to describe it.

Really though, you can do this to any character. Manny in particular is quite fun to murder.

Assassin's Creed (it's so fun to go on a shank spree after you beat the game) and any elder scrolls game (They're designed for you to screw around and avoid the main quest)
