I like Animal Crossing (any version, really) and Harvest Moon. Harvest Moon isn't for everyone but I can enjoy sitting back and watching my goat die because it's scripted no really how could you do that to me planting crops and picking the wife that will make the prettiest anime baby

Surprised no one has said Minecraft. That's like the ultimate relaxing game, put on a podcast or audiobook and grab a diamond pick axe, a bucket of water and you are good to go. My personal favorite is Dan Carlin atm.

Romworld between raids.

CK2 and EUIV for games I can relax to, listen to Let's Plays or tab out and read boards at the same time and pause and do more demanding things when I feel like it.

I like to relax with LEGO Lord of the Rings.

Running around, solving simple puzzles, and collecting things. It's unchallenging, but not mind-numbingly so. Add the fact that it features musical score and voice acting taken from the Jackson films (which I love), it's just a great opportunity to spend time exploring a child's toy box version of Tolkien's world.

I imagine the same could be true for a lot of older gamers if they found a LEGO game with a setting that they really loved.

Euro Truck Simulator 2. It's hard to explain what makes it fun, but it is. It's easier to show that it is mundane and relaxing.
Yahtzee did a lets play of it and apparently loves it. I think he gave much the same reasons.

I poorly cobbled together Brutal Doom and a Mech mod for Doom. It's a huge stress reliever just annihaltating all opposition while being pretty untouchable:

I have a game on my phone called Dungelot that's pretty fun for just chilling out and playing whilst doing something else. I find a lot of puzzle games or old school adventure games quite chillaxing too.
