Aquaria's music is absolutely INCREDIBLE. As is the music for Kingdom Hearts 2.

Mass Effect has brilliant music, both OST and the licensed track during the credits.
I loved Faunts before Mass Effect and wee'd a little when I heard M4 Part II on it. :)

Excellent soundtracks I can think of now:

Metal Gear Solid (all of them)
Homeworld (none of that new age space stuff but some cool arabic themes)
Prince of Persia (2008, some may not like the game that much, but the music was awesome. Sands of Time trilogy music wasn't half bad either)
Final Fantasy (not all the games but some of them are quite grand. FFX is my personal favorite, music-wise)
Devil May Cry 4 (nice and over the top)
Shadow of the Colossus (the music was half the game, some of the prettiest tunes I ever heard)
Armored Core (particularly For Answer IMO, very good music)
Okami (very suitable Japanese themes)

And of course GTA... (Vice City was the best)

I really liked the music from Breath of Fire III for the PSX. The soundtrack is very quirky and unique, and kind of jazzy at times.

I cried when Aeris died, because of how beautiful the music was, and how perfectly it synched with the materia dropping from her hair and down onto the stairs.

I'm also a softie sentimental person.

I want to get the OST for the Metroid Prime series sooooo bad.

Super Robot Taisen Og Saga: Endless Frontier also had some AMAZING music.
Here is the theme.

Rabbids Go Home has a pretty damn awesome soundtrack. It just seems to sync perfectly with their antics. Another is World of Goo, the soundtrack to which is downloadable for free [http://kylegabler.com/WorldOfGooSoundtrack/]. Well what are you waiting for?! Go download it!

I've always had an interest in anything that involved Jesper Kyd (Hitman, Assassin's Creed), Akira Yamaoka (Silent Hill), or Shoji Meguro (Persona). Love their work.

Final Fantasy as a series has some of the most memorable music of all time, not just in terms of game music, but music in general. It even inspired tribute artists/bands such as The Black Mages. Almost anybody who's a gamer is at least slightly familiar with Victory Fanfare.

I also found the soundtracks from the original Sonic games rather memorable. I listen to Mega Driver's versions of them while playing MW2 online sometimes.

Zero Wing also had a pretty badass soundtrack too, hence the all too well known remix.

A lot of driving games have some good soundtracks too. It's thanks to the Gran Turismo series I started listening to Feeder. Burnout 3 and Revenge also got me into a lot of bands and expanded my music horizons.

Wipeout (series) also had a lot of great techno stuff. Really opened my eyes to the genre and made me realise it's not just a load of chavtastic crap, but consists of a lot of awesome stuff. Aphex Twin! =D
