These are the games that I personally went "wow...this is amazing!" with at some point whilst playing them. Consider them the benchmarks of their time.

PC:

Quake 1, 2 and 3
UT99
Splinter Cell 1
SW:KOTOR
SW: Jedi Knight Jedi Academy (Force choking people over cliffs NEVER gets old)
Shogun, Medieval 1, 2 (Total war)
Homeworld
Black & White
Mass Effect 1
Dragon age: Origins
Command & Conquer
C&C:Red Alert
Total Annihilation
Starcraft
COD 4: MW
Sid Meiers Alpha Centauri
Sid Meiers Civilization 2
Max Payne
Freelancer
Half Life 2

Console:

Metal Gear Solid (1, 2, 3 - never played 4 so :/)
GRAW 1 & 2
Gran Turismo 2 (where did my life go?!)

I don't really think much of my console games in all honesty :/

Crysis (Because it's a game in it's own right and everyone should treat it so, it's a crap-load better than anything from the CoD series, and prettier too - it doesn't need a mammoth to run and I die a little inside every time someone suggests it's only useful as a benchmarking tool. *sniff*)

I err... Just a quick edit there.

It just makes me so damn angry!

Just Cause 2, Dragon Age, Mass Effect 1+2, Mount and Blade, L4D series, Stalker series, Vampire the Masquerade Bloodlines, and GMod if you're up for that sort of stuff.

I'm trying to think of one PC game which spans enough genres, and provides enough interest that I'd argue every gamer should play it.

Only one I can come up with is Deus Ex.

Whether you care about story, stealth, action, puzzles, or reading "The Man Who Was Thursday" in a really long winded way, it's got it all.

I believe that Crysis is a good game, but as FPSs go, I don't think it's worthy of a must-have list. Hence, I added the slightly flippant "Crysis Demo" since it is fun to be able to say, "I can run Crysis on Medium with only a bit of lag! My computer is awesome!"

[sub]Or, in my case, "Look! I can run Crysis on the very highest settings with no visible lag! My computer is really awesome!"[/sub]

Heroes of Might and Magic 3.

Heroes of Might and Magic 5 is pretty good as well but three is by far the best.

Stalker trilogy, anything made my Valve and the Creative Assembly, Crysis, Call of duty 2, Mount and Blade and Dark Messiah.

I wouldn't say its a must have, but Crysis was a fucking amzing game. I find that those that slate it never really played it and are just trying to justify the fact they cant.

Counter Strike: Source
Team Fortress 2
Left 4 Dead 2
Half-Life Series
(Pretty much the Orange Box and everything Valve)
Fallout 3

If you're into MMO's you should get World of Warcraft, but only if you think you're interested.

Here, here! Crysis is absolutely excellent, when you get used to flicking between suit powers it's like being the fucking predator, totally awesome, and yet it's still challenging because you have to use the powers well and keep your energy up. Plus the maps are excellent. Way more fun than the Call of Duty series.
