Erm...STALKER, System Shock 2, Half Life 2, DOOM, Quake, Unreal Tournament 2004, Serious Sam II, The Longest Journey, Grim Fandango, Silent Hunter III, Il-2 Sturmovik, Freelancer, X3 Reunion, Elite, Elite II, Privateer, Galactic Civilizations II, Hearts Of Iron II, Empire: Total War, Hidden and Dangerous II, Killing Floor, Neverwinter Nights, Baldurs gate 1+2, and some others I can't think of.

You seem to be forgetting Arcanum and Fallout, oh, and vampires.

Just Cause 2, Dragon Age, Mass Effect 1+2, Mount and Blade, L4D series, Stalker series, Vampire the Masquerade Bloodlines, and GMod if you're up for that sort of stuff.

I'm trying to think of one PC game which spans enough genres, and provides enough interest that I'd argue every gamer should play it.

Only one I can come up with is Deus Ex.

Whether you care about story, stealth, action, puzzles, or reading "The Man Who Was Thursday" in a really long winded way, it's got it all.

I believe that Crysis is a good game, but as FPSs go, I don't think it's worthy of a must-have list. Hence, I added the slightly flippant "Crysis Demo" since it is fun to be able to say, "I can run Crysis on Medium with only a bit of lag! My computer is awesome!"

Here, here! Crysis is absolutely excellent, when you get used to flicking between suit powers it's like being the fucking predator, totally awesome, and yet it's still challenging because you have to use the powers well and keep your energy up. Plus the maps are excellent. Way more fun than the Call of Duty series.
