Halo 2 (I borrowed original from a friend so I had that too)
Kotor

Star Wars: Clone Wars (not that great but fun if you like SW)
Kung Fu Chaos
Forza ms
Jurassic Park: Operation Genesis (epic game!!)
Fable
Star Wars: Jedi Acadamy
State of Emergancy
Star Wars: Trials of Obi-Wan (don't bother with this, it's ok but I like Jedi Power Battles more)

I had a bunch of demos too. Basically I'd recomend Kung Fu Chaos as a fun little game if you can find it cheap, JSRF because it's awesome and Jurassic Park (although you might be better off getting it on the PC). State of Emergancy is kind of like Dead Rising but without the zombies, which is cool.

The original Mercenaries. I know it wasn't an Xbox exclusive, but damned if it wasn't/isn't tons of fun.
Oh, and one more vote for Republic Commando. Most fun I've had with a Star Wars game without the words Old Republic in the title.

If you liked KotOR I, then get KotOR II as well. It's pretty glitchy when you play it on the 360, though. There's an audio glitch (a noise...like KRRRCHZST I experienced very regularly from beginning to end). But Obsidian added some very useful options to the abilities when you level (especially Finesse). They did omit some of those abilities from Blaster Rifles, though, so that method of combat is far less effective than all of the others.

Other than that: Beyond Good and Evil, Psychonauts, Jade Empire, Splinter cell: chaos Theory, Fable, and Star Wars: Battlefront 1 and 2 are all great.

This is the first time I have heard of this game since I owned it many years ago... such a great game, and if you have anyone you could play it with I'd definitely say this.

Other than than that though: any Timesplitters game (though that kind of relies on multiplayer again), Morrowind if you can't play it on PC, Halo 1 and 2, Kotor 1 and 2, Star Wars Battlefront 1 and 2, Splinter Cell 1 2 and 3, Stubs the Zombie...

A lot of people may disagree on this one, but Deus Ex: Invisible Wars I found really fun, enough to complete more than once.

There's a bunch more too, but I unfortunately can't remember most of them...

Circus maximus if you can find a friend to play it with you. It's not "good," but it is still worth checking out if you can find it.

Most of the good one I like are already mentioned. Except for The Warriors nothing more gratifying than smashing someone against a wall or one of the flying tackles.

7. Chronicles of Riddick: Escape From Butcher Bay
8. Psychonauts

You can also try Halo 1&2 if you're into shooters however I've never been able to get into Halo series and have never played them in-depth as much as I have the ones I listed above, however, Halo's success did cement the Xbox as a real contender in the console wars, so I guess it deserves mention.
