I'd say Red Dead Redemption, Gamestop was having a special where you trade in two games (from a set list of course) and get 40 bucks off of Red Dead. Best deal I've ever made.

Fallout 3 for me to, I also have GOTY. I've played it twice, once good and once neutral and now im being evil. And I gotta say, being evil is definitely the funnest, I saved the best for last. Even though I put so many hours into it everytime I play, the total is never more than 70; in fact with my new evil save i've only put in about 65 hours when I thought I put in over 100.
Just like you OP, Fallout 3.

Dwarf Fortress, game probably taken more hours from my life than chain smoking.

Fallout 3 as well 
I started a new game and I'm going to play more thoroughly, as well as "role-playing" more than when I played first. It makes it even more immersive.

Recently, I'd say Red Dead Redemption was a mild case of "must. play. more" but the worst was by far Assassin's Creed II. I stayed up til 4am around five days in a row playing it, with only one of those days not having university in the morning. That was fun.
Team Fortress 2.
I always find myself playing it. Starting as a heavy or a soldier first to get my score up and then playing as one of the classes i'm more crap at such as the Scout, Sniper, Demoman and Spy to work on my skills.
I've also become an addict to Left 4 Dead 2, however I'm always lagging out of servers, and Prototype.
