The first two Legend of Zeldas. Too boring, too hard.
Star Wars: Knights of the Old Republic: Boring for most of the time, and every time i got to the end of the level, and trigger the cutscene, the game crashes (Steam version). Haven't bothered trying to get it fixed.

Baldur's gate 2. Loved the first one, I started the second but I think I was just too busy to put time into it. Will give it another go one of these days.

"Gears of War" (The first) because... Well I like running out over cover to melee (blame Halo for spoiling since Brutes are such pushovers to going up and smacking them). So I would run out of cover and get my face shot off because in that game it seems I couldn't move faster than an overstuffed gnat with poor wing power. Also I could never bring myself to even finish "Bayonetta" because I got so fed up with the confusing story and game play.

L. A. Noire - I thought it was done after that chase through the catacombs-style sequence. When the next case started, I almost cried. I was just so bored, I was praying for it to end. That's the only game where that's ever happened to me...

I don't think I've ever finished a Final Fantasy Game, either. Except maybe III, and FF Tactics A2. Mind you, the others I've played were IV, X, X-2, XIII...perhaps that explains a few things. =P

Both Demons' Souls and Dark Souls. In both games, I eventually had the same thought. "Wow, this is well-constructed game offering a true challenge in unique ways. I wish they would make more games like this instead of games with checkpoints around every corner. Also FUCK THIS PART! ARGH! WHY DO I KEEP DYING? WHY DO I SUCK SO MUCH? FUCK THIS GAME!"

Now they're both on my shelf, daring me to play them again, and some part of me really wants to, but I'm just not up to the soul-crushing despair of it all.

Legend of Zelda Majoras Mask - got bored so quickly with that game, could never figure out what to do

Mass Effect - Failed to capture my interest

Gears of War 3 - Disc broke before i could finish the last act

Command and Conquer 3 - That fucking Mother ship keeps fucking me over.

Bioshock 2 - in my opinion, it failed to live up to the first, quickly lost interest

Thanks to gamefly i have so many I can't even remember them all. I get something to try it out and hate it. Last one I can remember was two worlds I think. Mostly I quite because I stop having fun.

Farcry 2. I liked the environment but being attacked by everyone everywhere just became too annoying. I would spend so much of my ammunition I had just bought just getting to a mission.

There are many I haven't completed. But among those I own:

Donkey Kong Country Returns.
Disgaea 4.

I'll probably get around to them at some point. The current record holder for time between purchase and completion is Legend of Dragoon with FF IX a close second. LoD kicked my ass a couple of times. Though I think that was side-quests that really got me to give up for so long. And FF IX just didn't hold my interest while turning me off with the weapon system.

For a long time, it was Banjo Kazooie because of that damn final boss. Then they rereleased it on xbox live, so I played it over again just to kick Grunty's ass. Then I tried to play Banjo Tooie for the first time and... never beat it. Too many damn collectibles, it was a pain in the butt to navigate, and really really really vague objectives.

Only gonna list Role-playing/Adventure games here (otherwise the list could get ridiculous), and I'll probably miss quite a few.

-Final Fantasy X, X-2 (Don't look at me like that, I got X and X-2 simultaneously when I bought a guy's game collection) and XII. Never bought or started XIII, I know better now. All three games now live in my binder of shame.

-Final Fantasy II (not IV/2-US, but II). Seriously, fuck that leveling system. Definition of grinding right there.

-Kingdom Hearts. Never started 2 (though I own it... same collection purchase as FFX, X-2 and XII). They live in my binder of shame as well.

-Xenosaga 2. Binder of shame.

-Ultima 3, 4, 6 and 7. I eventually to want to go back and at least finish 4...

-(Cardinal sin 1) Morrowind and Oblivion. I dislike the gameplay, setting and stat system in TES.

-(Cardinal sin 2) Baldur's Gate 2. Pissed me off that they gave you a stock set of good-aligned companions at the start instead of tracking who lived and died in the first game. I beat it as an evil character, Minsc and Imoen were dead.
I'll go back one day. Probably when a remake comes out.

-Breath of Fire 2. I keep meaning to go back to it. This just reminded me again.

-Drakkhen. SNES game. Didn't like the interface.

-Lagoon. Interesting SNES title with really bad combat. Didn't matter what sword you got, the damn thing was always the size of a dagger, and combat was real-time. Most of your time is spent attempting to line up a shot and (in my case) missing. Maybe I just suck, though.

-Tactics Ogre: Let Us Cling Together. That game whooped my ass when I was a teenager (I hit a battle I was completely unprepared for some 10 hours in with no save to take me back before I got railroaded into it, and I was unwilling to start over), and I never went back to it. I may just want to dig it up again someday.

-Tales of Phantasia. I really should give it another try. This was one I quit because I was working full time and going to school full time.

-Ys 3: Wanderers from Ys. Very much a Nintendo Hard title. Another that whooped my ass as a teenager.

-Phantasy Star 1, 2 and 3... I played and beat 4 before I acquired the first three, and they were underwhelming in comparison. I still intend to beat them all someday, though.

-Resonance of Fate. I still pick it up and play it once in awhile, but I've gone on hiatus from it three times now. I'll finish it one day...

-Septerra Core. Not sure where that disc got to. I kinda wanted to finish that one, but it was another I was playing when I gave my life up to simultaneous work and college.

-Final Fantasy Tactics Advance. I was expecting something like the PS1 title. I was disappointed.

-Castlevania: Dawn of Sorrow for the DS. Embarrassing, really... I got stuck and never bothered looking up what the hell I was supposed to do next... and I love Metroidvania games. Maybe I'll go back to it eventually.

-Disgaea: Afternoon of Darkness. My first attempt at a Disgaea game, and holy shit was I unprepared for the grind. I gave up some 50 hours into item world battles. I have a fair amount of free time, but that thing's a bigger time sink than an MMO (at least, the way I play MMOs). Also, the battle system could use a little more verisimilitude. Firing from high ground=further arrow flight. Final Fantasy Tactics and Tactics Ogre know this, why does Disgaea not?

I'm sure there are more, but that's what I could think of in the time I was willing to spend on this.

Oh boy that would be one hell of a long list. I can't even remember all the games I've played let alone the ones I never finished, but let's see off the top of my head there's:
Sonic Heroes - Never could get all the chaos emeralds to unlock the final story. Fuck those stupid special stages.
Metroid Prime 2: Echoes - Never beat the Boss Ing. Only fought him once, but he flattened me so thoroughly that I never bothered to try again.
Persona 3 - Got all the way to the Final Boss, but couldn't beat him. Got soooooooooo close to beating him, like within one or two hits, twice. However after the third attempt I just couldn't be bothered anymore, mostly 'cause the fight was so fucking long a brutal.
Metroid Prime 3: Corruption - Couldn't get past the fucking Dinosaur thing with the red orbs.
Red Dead Redemption - I got bored, simple as that.
Star Trek: Legacy - Couldn't get past the early NextGen mission that involved protecting planets from stellar debris or whatever. No matter what I did, one of those giant fucking rocks would always end up striking one of the damn planets.
Mega Man X - Could never beat that damn spider boss thing in the first Sigma stage.
The original Metroid - Nintendo Hard, nuff' said.
Red Alert 3 - Long story short, after completing the first set of objectives in this one Soviet mission, I get some new objectives that involve ensuring this asshole General survives. Figuring the douche could take care of himself, I ignore him and proceed to carry out the other objectives, only to be told about 15 minutes later that the dumbass had been killed and I'd failed the mission and would have to do the WHOLE THING OVER AGAIN inc. the objectives I'd already completed. Well, "fuck that" said I.

There have been many many more, but that's about all I can think of right now.

Star Ocean: till the end of time. Great game, just haven't had time to finish it yet.
Castle Shikikami, I bought the game for like 10 dollars, and have still no idea what is going on.
Dark Cloud, assuming you count the last dungeon after the genie.

First, Company of Heroes. There is nothing wrong with this game, I just never felt like finishing it despite starting it a number of times. I have given up on ever completing this.

Second, Just Cause 2. After enjoying the hook-shot and freedom of the gigantic world there's really not very much enjoyable about this game. I gave it a decent chance and there certainly were some enjoyable aspects about it, I just didn't really like it as a whole.

Third, Amnesia. Again, nothing wrong with this game, I'm just apparently a massive coward. I intend to complete this when I grow some balls.

I bought Mafia 2 and Bioshock 2 and never started them. Do they count?

Skyrim and Darksiders. They get way too repetitive at one point. Plus the combat system in Darksiders makes my fingers hurt.

Hmm... Well let's see.
There's Gears of War 2. I ran into a glitch with the AI that annoyed me a good amount. I was already bored with the game anyway so I just traded it in after that.
Ocarina of Time. That wasn't exactly my fault. I was playing a copy of it borrowed from my younger brother had he decided one day to trade it in for another game without telling me...
Bioshock I ran into a glitch again and it really annoyed me. It was only a retail too so I didn't bother getting it again after returning it. I really should get it another shot now.
Zelda: A link to the Past Another borrowed game I had to return before I could finish it. (seems to be a common trend for me)

That's all I can really think of at the moment. I'm sure there's plenty more though.

mass effect 3...oh wait...that was just a shitty incomplete ending

(hah sorry, just had to do it, hadn't seen anyone else do it yet so figured i'd fit the bill and pay that one off)

on top of that, i have tons of games that i started but never finished, but i'll just list the ones that i actually got a fair chunk into

heavy rain (fuck that emotional game)
half life 2 (snore fest)
total war shogun 2 (just...can't. the game is boring as hell to me)
metro 2033 (eventually someday i'll get to it)
mount and blade warband (love this game..but is there an endgame really?)

Bioshock: Kept trying to come back to it but could never finish it, I guess the game wasn't really fun enough.

Darksiders: Was a bit tedious but I loved the designs of some of the characters.

Singularity: Really poor execution, I couldn't get past the buggy corridors and staged encounters, everything felt really rigid.

Braid: Like 3 puzzle pieces I wasn't able to get, I still got back to it every once in a while.

Fallout 3: I was doing pretty well despite me not enjoying the environment, and really got into the story but then something came up and I haven't gotten back to it, it's been months.

There are more but I would consider them a work in progress, I might go back to some of these just to justify the purchase of them or to see how they end.

Dead Rising. I just couldn't bring myself to sit through the worst controls I've ever seen in a game, awful combat, a downright retarded saving system, and a story that was more enjoyable to experience by looking it up on Wikipedia.
