Games:
Jetpack Joyride
A bunch of the other stuff that's already been mentioned.

Apps:
Poweramp for listening to music
Musixmatch for identifying unknown music, just let it hear a sample and 9/10 times it'll correctly ID the song

Check out some of the stuff by gameloft...NOVA, Modern Combat and Asphalt are surprisingly good, though there isn't really anything much to the missions (it's more about the multiplayer for me, not unlike the games they're imitating). Also critical strike is a really good clone of counter strike. I use an iControlPad for all of those seeing as the touch controls are only bearable at the best of times.

Some apps to also look at:
Just shake
ES file explorer
ES task manager
Quickoffice
Skype
Steam
Navfree

I kinda like trippy stuff

Splice
Eufloria
Superbros: Sword and Sworcery

Then there are some more classic style RPGs like

Cardinal Quest
Hero's Call

Edit: Stunned I forgot "Speed"

Ive loved this game ever since first playing it as a minigame in xenogears.

But personally, I would not even bother for emulators on either a cell phone or tablet. Unless of course they have magically sprouted physical buttons, D pad, analog sticks and shoulders.

While I know the devices typically have the horsepower, and I have seen examples of Android devices running them smoothly, Unless you are running it off a KIRF like JXD, Yinlips, Pandora, ect lacking physical controls will be more aggravation than its worth, making it not worth the effort.

PROGRAMS:

Personally I love Wikipedia offline, though it can be a PITA to get set up.

Trillian of course

Dropbox if you havent already set up a backup locker.

I like multi tools like Swiss Army knife

A good flashlight.

Sadly for all the freedom in rudimentary program design and how you can use programs to turn your device into a different type of tool are woefully lacking and mostly due to lack of imagination on the part of devs.

Side note: Personally I am still trying to pin down some good programs to handle things like media management Like one consolidated program that handles music, video and image display in a logical manner as well as Root/super user.

Anyway, best of luck Hope some of these might help.

A few of my favorite games that noone has mentioned:
Anomaly warzone: Korea - It's a tower defense game reversed, you are the one attacking and it has pretty nice visuals.
Trials 3
Dead trigger
Mass effect: infiltrator
Dead space

The only thing I'd add to the above is Waking Mars, got a few mentions in game of the year lists, great ambient experience.
