Okay, so i'm a mage/warrior at level 2, i've killed umbra and took her sword + armor at level 1, and just looking for stuff to do. (i'm playing on the 360 so mods are a no-no :()
How exactly did you manage to kill Umbra at level 1?
In the room where Umbra is, there's four pillars and two tables below them. you grab a basket, put it on the table, jump on the basket then jump onto the pillar. get that staff from the goblins at the start of the game and just keep attacking here. if you run out of charges, use flare. she can't hurt you.

Go swimming!

Pack a picnic.

Run away from everything.

Steal a horse.

Visit Glathir.

Go exploring some meadows.

Level up.

Pick a fight with an imperial guard and see how long you can last against them resisting arrest. See how high you can get your bounty to go.

Might be an idea to save first though...
This is SO much more fun in Morrowind, where every NPC can die.

Beat the game.

With vanilla Oblivion's broken difficulty scaling, it's completely plausible to finish the main storyline at level 1 even.
Sorry for the double-post, but I had to address this:

Note that finishing the main storyline is easier at Lv2 than it is at Lv1, not because the character is stronger, but because getting the Daedric artifact for Martin as part of a quest is easier if you can do a simple quest like Sheogorath's Wabbajack quest rather than having to pull off the aforementioned killing of Umbra (allowing you to circumvent the Lv20 restriction on Clavicus Vile's quest---see UESP.net for details.)

Beating Oblivion at Lv2 is ho-hum. Doing it at level 1 is a feather in a gamer's cap.
