Fictional? Hmmmm, that's a toughie. Possibly the entire Assassin team from the present day in Assassin's Creed 2. Shaun would be a good laugh (since we're both British I'd be the only one there to understand his humour, and Danny Wallace, the voice actor, is such an awesome humourist IRL...), and it'd be interesting if they allowed me to try out the Animus. I could see what my own ancestors were like, and if any of them were Assassins (in the fictional universe, of course...)

But if I had to choose, I'm stuck between two people.
If I wanted an intelligent kind of day, Serj Tankian. I think he'd be a cool person to meet, seeing as how he's such a talented musician.
If I wanted to have fun for a day, no intelligence required, I'd choose Johnny Knoxville. We'd go do crazy stunts on film all day.
