We get expansions and mods?

Morrowind so so so easily.

Oblivion in second. Since mods for that game are cool as well.

1. Minecraft (Could build giant structures with no limits, perhaps a full computer with redstone)
2. EVE Online (I play it a lot already)

Hmm, tough one. I would go with an odd choice - WoW. I've never even played the game, but I figure all the players and new content constantly coming out, it would keep it fresh. If it died out then I'd be totally screwed though.

Rock Band, without a doubt. It's the only Xbox game that's seen the inside of the CD tray in 3 years.

Neverwinter Nights or The Elder Scrolls III: Morrowind.

Why?

Simply because you can make your own stuff for these games and download things other people have made. Making your own stuff in and of itself can be fun too.

If I can play against someone? Some form of fighting game or TBS, probably.

For solo play, Minecraft comes kinda-close-ish. But no, Dwarf Fortress all the way, when all's said and done.
