It's been awhile since I played it, so I may be wrong, but I'm fairly sure The Witcher 1 can be played mouse-only using the isometric view.

A friend of mine had to have her left arm amputated a few years ago, I know for sure she plays Everquest one handed.

You wrote that you said "many PC games", is this person limited to PC games or can console games be mentioned?

From the begining of the 21st century, I give you one of the best games ever made.
Warcraft III: Reign of Chaos
Warcraft III: The Frozen Throne

Strategy games, to become good and competitive, macros are needed, but I suck at strategy games, even if I love them. So I used 98% mouse only when playing this game as a teenager. The other 2% was to write cheats :p

Hearthstone. A lot of PC games can be played one-handed with a fancy mouse with buttons on it. They just have to feature rebind-able keys.

All games that I have on the PC have been listed here. Which is nuts in a way.
If you use consoles for multiplatforms, then it is pretty expectable.

After all, the whole principle behind the desin of PC-oriented genres, is that you can place all sorts of buttons on the screen to be clicked, like in an utility software, while all controllers can do is navigating a player character in a 3D space.

And even the ones that utilize typing, can be used with one hand just like this website can, or microsoft excel can, because like these, much of it is not real time cinematic action.
