My favorite "genre", so to speak, is probably sludge or doom metal. Either way, Mouth of the Architect is a good representation of what I like, especially their cover of "In Your Eyes" by Peter Gabriel. They represent the "sludge" part, by the way, but what I like about sludge and doom is the generally slower tempo so not a big deal there.

I'm a bit of a funk fan. Also some jazz, RnB, disco, latin and even classical. Anyways I present one of my favourite songs from none other than... Stevie wonder! My favourite song of his is Sir Duke.

the genres blues but its far too hard to find an example, especially when the genre has so many different people that have helped define it.

Since you've taken prog death and Opeth OP, I'm gonna slide in with my second fave, some atmospheric black metal.

This is a cut version of the song, but perhaps a little easier to get your teeth into. The songs got a nice blend of melodic singing, and that harsh, bleak black metal style. Inspired by nature, and you can tell, it pretty sums up my favorite aspects of atmospheric stuff.
I'm not really into it anymore, but you might like the band Drudkh.

Here's my submission, hopefully I'll be seeing 'em soon.

Fate of Norns by Amon Amarth. A very heavy and dark song but also shows compassion and amount of thought put into the lyrics.

For Ze prog metal side:

I'd like to add SikTh or something, but since it can only be one, and Protest are way more accessible for non prog fans.

Melodic death metal:

Earlier In flames pretty much defines this genre, and this song shows the juxtaposition of melody and brutality clearer than just about any other.

House:
Daft punk are pretty much the only band I listen to this in this genre, that's how good they are.

Also props to Op for using Opeth, who are indeed really awesome.
You should check out Porcupine tree too by the way, if you haven't, they're a pretty big influence on them, and awesome in their own right.

Such an amazing song and the 2nd progressive metal song I'd ever heard. It was either this or Bleed by Meshuggah (my 1st prog metal song that got me enthralled by the genre)
When I first that song I couldn't stop headbanging.
It's just a fantastic album in general too, I would say it's easily their best.
