Mario Kart Double Dash is a great game, I loved playing that.

As for games you should get:
Any Mario Parties on the gamecube (4-7 I think.)
Phantasy Star Online Episode 1&2
Tales of Symphonia
Super Smash Bros Melee

I'll try to think of others.

Fire Emblem: Path of Radiance
The Legend of Zelda: Wind Waker
Super Smash Bros. Melee
Phantasy Star Online Episode 1/2 (if you don't mind playing offline)
Soulcalibur II

Paper Mario: The Thousand Year Door.

<- looking at my pic, i may be biased ^^

StarFox Adventures was pretty good too (overlooking furry and lack of plane flying)

Thirded super smash bros belee and it's very good you got mario kart double dash!!, which is my favourite mario kart game.
Also... super mario sunshine

Another game I played a lot on the gamecube was sonic adventure 2: battle (but honestly I don't really recommend it, if you've got a PAL gamecube at least).

Starfox: assault is also another amazing game for gamecube.

Try to get Metroid prime one and two, those are realy fun to play.
Paper mario and the thousand year door is quite fun to, at least it's something different.
And ofcourse Super Smash Bros. melee as has been said already.

eternal darkness: sanity's requiem, if you have even a very small interest in the horror genre you need to track down this one.

Here is a quick few recommendations:

Metroid Prime (preferably the first) - superb, atmospheric and beautiful adventure/FPS.
Ikaruga - amazing SHUMP.
Eternal Darkness - Silent Hill level scary.
Time Splitters 2 - A fun and classy co-op FPS.
Rogue Leader - Enjoyable Star Wars-centric flying combat.
Paper Mario: The Thousand Year Door - essentially flawless RPG that is consistently funny.
Viewtiful Joe - Hard but fun 2D platform brawler with time travel mechanics.
F-Zero GX - Lighting-fast sci-fi racer with lots of content.

Ikaruga, if you can find it and you like painfully hard arcade games.
Custom Robo, really fun mecha game.
Paper Mario: The thousand year door, Great RPG with a lot of self parody humor
Metroid Prime: Just because its awesome

I'm on somewhat shaky ground with this but consider Geist. As an FPS it's admittedly subpar but makes up for it with original mechanics and surprisingly good story. If nothing else it?s different. Not to mention cheap.

Oh, and if you want horror Eternal Darkness is pretty good.
