Pokénerds assemble!

Alright, so I'm in need of some help with Pokémon Heart Gold at the moment.
But not any run of the mill advice, this sort of question is the one that can only be answered by a hardcore Pokémaster.

The question being:
"If I use an Exp. Share to help in training a Pokémon, and I purposefully battle against Pokémon like Gyrados, which give me Attack EV's, will the Pokémon that is holding the Exp. Share take on those EV's?"

Appreciate it.

Yes it does. Use it for a few levels, then find a good spot for the EVs you need and give them the corresponding Power item. Pokerus makes it even faster. You can finish EVs within half an hour.

I believe the answer to that is yes, they do. As reference, I give you this quote:

Also, the item Exp. Share splits the experience points gained between Pokémon; however, every single participant of the battle (and holders of Exp. Shares) will get the full amount of EVs each. If three of your Pokémon were to fight an Alakazam (it gives 3 Special Attack EVs), they would each get 3 Special Attack EVs.

Hope that helps.

Also, vitimins make everything easier. At least in my opinion; I'm very lazy.
