I think that sums up my answer.

I would befriend a disembodied Bavarian scientists whose pupil has learned how to travel to other dimensions. Then I would let the beast kill me and have the scientist bring me back to life to go traipsing off over different worlds forever.

I would DODGE!! using anything from a car, a bike, my legs, and put as much distance between me and it.

Well, the beast is a horrible monster that will pursue me forever across the world, right? It is incapable of being destroyed or captured.

However...you did not say that it could fly.

The answer here is to leave the planet, hitchhiker style if necessary. This is not a matter of anyone trying to stop it or destroy it. This is a matter of "It will never be able to jump into space.". Unstoppable doesn't mean inescapable. It will pursue me forever...but will not be able to leave the planet.

Try to outwit it. There must be at least some way I can keep slowing it down long enough for me to get to help, since I'm not fast enough to outrun it. Then I would use the time I gain to figure out it's weaknesses.

I would fly into space, and since he 'never gives up' he will chase after me. We will fly all the way to a black hole and I'll shoot a hook at his ship. If I go down, it goes with me.

With we then find ourselves in a different dimension, it's immortality rules will not apply, and I'll fight it or die trying.

I am the unstoppable monster. At least, several of my nieces and nephews think I make a great monster, though I am technically stoppable, when the right number of children swarm and tickle me. Then everything degenerates into 'bop uncle with pool noodles until Mom says it lunch time, or the kids get tired.'

OT: I'm an SCA heavy fighter in training; there's nothing that I can't negotiate with, using the end of a stick.
