Today, to celebrate that I can have breakfast after my 2-day yesterday (Just recently started the 5-2 diet with my mom), I had some impossibly delicious Japanese-style hotcakes for breakfast.
(And before anyone nags me, I know that you have to watch what you eat even during the days when you don't diet, but I eat this kind of pancake extremely rarely)
Anyway, that made me think about breakfasts overall.
And so I ask: Do you prefer to have something sweet or something savory in the morning? As a plus, post a recipe of your preferred cooked breakfast, if you'd like.
I guess I don't really have a preference, personally. While I do have a bit of a sweet tooth, I'm rarely hungry enough in the mornings to care too much about what's for breakfast. I usually just have a small cheese sandwich and a cup of tea, as bored of it as I can be sometimes.
Sometimes, we have some toast and homemade marmalade.
Easy-Peasy Marmalade
1. Simply take as much pectin-infused sugar as you have fruit or berries. (So if you have 100 g of fruit, you should add 100 grams of sugar) If the fruit you're using is sweet enough, or you just prefer something less sweet, you can use half the amount of sugar.
If pectin-infused sugar is not avaliable (I don't know how hard it is to come by outside of Sweden), add some regular pectin. Follow the directions on the package. <3
2. Put the ingredients in a saucepan and bring to a boil. Lower the heat and simmer while stirring it for about 5-10 minutes, or until it thickens. Remove any foam you see.
3. Transfer to a clean jar and let it cool. Store it in the fridge.
4. Ta-da! Done! Enjoy your marmalade on scones, toast or whatever you fancy.
