In a game that has you create your character at the beginning like Fallout 3, Mass Effect, UFC: Undisputed 09, Oblivion, The Godfather 2, Saints Row, etc., who do you make?

I tend to try and create myself but it never turns out well.

An entirely new entity, with form and purpose. With a nobility and regality that far surpasses any of the characters in the game.

Hmmm, well I don't add muscles (I'm a woman and not one with muscles) and I don't try and create me, but something sort of vaguely me-like but better, iygwim?

In my single playthrough of Saints Row 2 I was...

1-Black Jesus the Blaxploitation pimp.
2-A scrawny mexican
3-A massive latin women wearing a pimp suit.
4-Xerxes
5-Nathan Explosion

And probably some others. I think I beat it as Xerxes though.

I create me as best I can, actually making myself more lanky just to exaggerate on my lack of muscles. Usually, I can do a pretty decent job of creating a good representation of myself.

Anything that can closely represent either Gordon Freeman or if the choices are like that in oblivion, gotta go with the black spiked lizard man. Iguana-Man will destroy all who oppose him with fire and the power to summon a bear! GRR!

I press the randomize button because i don't care, fallout 3 and oblivion and a lot of other custamizable character games out there don't really have you seeing your created character much anyways beyond the back of the head view or first person view looking at your rippling forearms(yeah swing that sledgehammer with one hand, the one i couldn't lift with both arms).

I never create myself. I like projecting into other characters. In hindsight, my custom characters are almost unanimously people of colour. That could be because I'm subconsciously countering a perceived lack of diversity in protagonists of mainstream games, or maybe just because it's a lot more appealing than seeing my own transparent paleness reflected back at me for who knows how many hours. XD

I don't really base my character models on anyone, because I generally like each of my characters to have their own unique looks and personality, partially so it doesn't get confusing when I do different playthroughs, but also because I like the way it messes with the canon; all experiences and characters are equally true, but everyone else out there is playing a slightly different game with a different character from me. Gotta love that.

I mix between trying to create myself and creating an idealised version of myself. In games where you can control muscle mass etc I aim for me if I actually worked out and had muscles, but most games don't let you control that.

This also extends to in game choices in RPGs.

Depends on the game. In SR2 I tried to create an uber fat version of myself... I thought it turned out pretty good.
