I only get them if there's some in-game stuff. If all it includes is a "behind the scenes" or "how it was made" or anything on those lines I completely ignore it as useless junk. I don't care much how it was made or who were the faces that did it, all I care for is playing the game they worked to make. If I get an extra bonus for collectors edition then I may be inclined to buy it as long as the extra price is worth the extra content, which normally is even as a useless thing for fashion or anything like that, just adds a little color to the masterpiece... or a small fly to the huge fecal matter.

Damn it I really wish I'd gotten the Collectors Edition of Fallout 3.
I don't usually have enough money to pay for the collectors editions but If I did I would pay the little extra. I simply love looking at concept art, and the little toys that come with them... :3

In game content.
As long as only people who got the collectors edition get it *cough* Gears of War 2 *cough*.

Even though all the nice added content is always good to have, I like Collector's Editions, well, because I'm a Collector. It's a psychological thing.
I like the Fallout 3 lunchbox and bobble head. I wish I could have afforded the collecter's edition, if not just for that. In-game content is nice too, but things like the golden lancer just make you look stupid, IMO. Mostly I like the little toys and stuff. I'm a sucker for toys, ever since my childhood when they decided to stop putting toys in cereal.
Generally depends on what is included and the price for it all.
For example; I thought the Halo legendary pack was a bit much, the helmet was cool an all but not worth over $100. I did however get the heroic pack with the concept art and special features. I got the Fallout 3 collectors as a gift and enjoy the art book and bobble head. Sad to say my latest collectors piece, RE5, was not what I espected. The Chris figure had the gun and knife handle broken off upon opening the box, the necklaces string is very weak and wears down quickly, I havent tried the patch yet it looks good but I cant sew, so I got jipped on that purchase, blegh.

In game content: Why should I have to pay more for content that was made for the release of the game? Collecters Edition in-game bonus's are just scams.
Cool toys: Sometimes they are worth it. Cool little extras and shag are the only reason to get collecters edition.
Making-of videos and commentary/Concept art: That stuff should be free from the website.
