I'm a pretty good cook (cooked professionally in a small Italian/American family restaurant for a couple of years). But most of my cooking doesn't *look* good. {shrug}
As a single parent I feel like I need to cook, but simultaneously don't have loads of time to do it. So I tend to pre-cook big batches of things that can then be mixed/combined with other foods to make something different. Last Wednesday I cooked up a big batch of chicken breasts which I've since paired with pasta, potatoes and rice for different meals.
Further complicating matters is finding more and more foods that my kid and I both have sensitivities/allergies to, which is really starting to limit the list of things I have to work with.

You could try lightly pan-frying them before baking them. (Of course you have to watch for them sticking during the frying as well.) Frying them first gives them an outer layer that is less likely to stick.

I started losing too much weight from being lazy and eating nothing but Lean Cuisines (which are disgusting, never eat them). I don't eat a lot of food and feel like I waste more than I eat, so I recently signed up for one of those services where a bunch of food is delivered to you in a refrigerated box. It comes with recipes and you cook the meals.

I spend more time cooking than I would prefer (I hate cooking for myself), but so far the food has been really good. The meals are for two people, so I can usually get 2-3 dinners out of each one, so it's worked out to be pretty inexpensive, as well. I'm hoping this will help me become more accustomed to cooking and start better habits.
