I do play in peaceful mode, but I dont think I could bring myself to give myself infinite blocks. Honestly my huge island castle just wouldnt feel anywhere near as impressive had I not had to dig down to the bedrock and start hollowing out to get everything I need.

I might do it one of these days, but I sort of doubt it. As it stands I could get a decades worth of play out of MC. If I didnt have to work to get resources... I would have lost interest months ago.

I do, but only for tools (pickaxes and shovels), TNT (I play on a passive server, so no gunpowder for me) and snowballs for when I want to mess around. In the process of working on my current project, I've used over 50,000 units of cobblestone. Some of the nearby mountains have gone... missing.

I certainly do. All the time. Always. I like building huge things to scale (currently working on the NCC-1701). If I was to spend time mining the resources, I would never, ever, have time to actually make the ship. And making it to scale, with all decks, is already sufficient enough of a challenge.

Mining itself is a skinner box. Of course people will enjoy it, that is the point of a skinner box!

To me, the challenge and the game is in the construction, not the mining.

And why not just buy legos? Minecraft is significantly more affordable!
