Star Wars cantina scene, blood makes no sense here, as the extremely hot blade of a lightsaber should cauterize the wounds as you create them. Fleshy pieces everywhere? Yes. But not a lot of blood.

The very concept should have you shaking your head, especially since you mention the cantina scene where it doesn't happen.
It's all to make it a family friendly franchise. It flip flops too, by all rights of instant cauterization, Qui-gon Jin would have totally survived. He got stabbed in the stomach, not an immediate death sentence unless you bleed out. Oh but Darth Maul makes it even though he got cut in half.
But you know, lightsabers also made Obi-Wan just immediately vanish once he got hit, so maybe it's magic.
