I like Omelets. What I do is put a tad of olive oil in the pan, throw in some black forest ham, some diced onions and diced tomato and throw those in the pan after the ham was given a minute or so of cooking. The ham already has a lot of salt so I only add a small pinch more, and add pepper to taste.
I clear the pan (put the ham and veggies on a small plate) and already have my eggs in a small bowl. After you've let the pan cool a bit throw the eggs in. If needed add a bit more olive oil. Then take the ham, onions and tomatoes and throw them and cook the eggs. It's delicious.
Also PurpleRain the trick to good cooking is not to overcomplicate the dish. A good rule of thumb is if you have more then 10 ingredients (seasoning not counted) then it's too much. Keep it simple. Learning how to properly cook different ingredients (like steaks, roasts) comes with time.
