Mortal Kombat, simply because it was, the first fighting game I played and I grew up loving it.

The Guilty Gear series.
I like it because of its complexity and balance, there is no way a beginner could ever defeat an experienced player by simply mashing buttons and there is no one strategy that defeats all the other.
I also find guilty gear to be one of the most challenging fighters out there, but once you master it it also feels the most rewarding.
Only too bad it's often overlooked in favour of other more widely available fighters

Hands down, it's Tekken. Not only was it the first fighting game series in which I became skilled (and subsequently god-like), but it was the game I played with my brother in my childhood. Hell, it's the game he played with my dad before I was old enough to hold a controller. It's a pleasant little piece of my childhood, like Mario and Sonic for some other gamers.

Where's Marvel VS Capcom? I lost hundreds of hours on the second on the dreamcast. It's also my favourite fighter ever.
