Dragon Ball- it was my first anime and something I'll always fondly remember that my aunt introduced me to. I love it up until GT (because fan fiction is not canon, but I do like that they made SSJ4, that can stay).

Yu Yu Hakusho- Kurama. That is all. maybe some Hiei.

Deathnote- it was unlike anything I'd ever seen and really engaging to boot. N and Ryuk are my favorites.

D.Gray Man- Allen and General Cross. Their relationship is interesting and then I do love a lot of the other characters in this anime.

Full Metal Alchemist: Brotherhood- The Elrics and for many of the same reasons I love the live-action TV show, Supernatural.

I'll round off the rest of my favorites with Beyblade, Digimon, Shaman King, Duelmasters, and Monster Rancher.

I got myself a three way tie.

The World Only God Knows- Great comedy and great story. The 3rd season was a little weak but had some unexpected feels at the end. Still I power watched the first two seasons to catch up to the new season and I enjoyed it all the way.

Fairy Tail- The only action-heavy shounen I watch. I love the characters, though the fandom is a little scary. I really like the medieval theme, maybe that's why I enjoy it.

Full Metal Alchemist (Both)- We all know why. Great action, Great Plot, Great characters, great feels, and etc. Just an overall great show.

Favourite Shounen...

Hmm, you know what...

Neon Genesis Evangelion

As far as the original tv series goes, it functions as a fascinating character study into the minds of ill-adjusted individuals and how they handle/mishandle their lives. The exploration and presentation of the themes of depression always intrigue me.

All in all, it's interesting to see these unique individuals break, to reflect on how their struggles and trauma have permanently changed them. The process of breaking these characters down.

It's flawed as hell, but it holds great personal value to me. :)

P.S. TV Tropes says it's Shonen!

P.P.S. I have a larger list, but I'm far too lazy.
