This is pretty similar to what I always did, too. Though, I'd get Enc-None as soon as possible, and try to keep my levels as low as possible. Generally, I could get the Ragnarok and not have my characters much higher than level 20. Then, it was just about getting Cactuar and Bahamut. Bahamut for 4x Ability and Cactuar for all the bonuses. KO two members and get the one alive member with Str, Vit, Mag, and Spr Bonus. But the time they reached level 100, their base stats should be around 100-120 each. Add in some good Junctions, and most stats should be in the 150-200 range and Str should be much close to 255 with Ultimate Weapons.

Does it really matter? For the most part all the limit breaks are badass and due to the way the draw and junction system works, switching party members is essentially just switching skins.

Besides, FFVIII was terrible - sorry if you liked it, given that it was the first RPG you played...and I'm even more sorry to hear that it was the first RPG you ever played - with a tedious side-game, even more tedious magic mechanic, and a story with enough plotholes to drive a Doom Train through.

Oh, and as has been hinted at in previous posts: the game is WAY too easy to break thanks to the junction system.
