Yep, another vote for KOTOR here. Seeing as how you like Mass Effect and SWTOR, it just makes sense.

EVE isn't something you can just jump into, it takes a bit of getting used to. Its a Marmite game really, if you give it a go and shooting other players is your thing do not listen to the carebears that tell you to mine or mission run for months first. Watch and read a few player guides and then fit some cheap ships and go find some fights, you will die a lot but learn the lesson from each death. You can only learn by doing, huddling in high sec and mission running will never get you anywhere. It makes things worse because when it comes to learning how to fight you will probably be in far more expensive ships and losses will hurt more.

Thats assuming PvP is your thing of course, if you enjoy PvE or mining and trading have at it hoss and good luck :)

Watching and playing are very different experiences. You are doing yourself a disservice if you skip over Deus Ex (the first one). Equally you are doing yourself a disservice if you skip over System Shock 2. Both of those are utterly amazing games that influenced countless descendents.

I'm looking for something that was developed past 2005 if you catch my drift.

I must second the Shadowrun Returns entry, plus...

Xenogears. It's an oldie but goody. Pretty sure you can either find a port or emulate.
