Of those, Ganon. He's the only one who actually schemes and does dastardly deeds. Bowser's just comical, hardly evil. Ridley's a pirate, not evil per se. Pyramid Head is a manifestation of the viewer's subconscious, so he can't really be "evil." And the T-Virus isn't sentient, so that strikes it out.
If you put WESKER rather than "the T-Virus", THEN we would have a clear winner =P
But then again, evil is a subjective definition. I'm sure Wesker didn't consider HIMSELF evil when he sacrificed the most elite special forces unit he could get his hands on to see if his weapon worked.

Well, I'm going to say Pyramid Head, since he's the only really serious villain on the poll.
Bowser is more of a comic villain, Ganon isn't particualrly villainous and only really has one goal, Ridley's just a pirate and the T-Virus isn't a villain, it's a virus.
