Ehm well, since it cannot be quantified exactly since everybody's bound to forget something, here's a list of things I have done/should know shit about

I possess a standard Dutch high school VWO diploma(can be compared with all AP courses all the time),which shows that I graduated in: Math, English, Dutch, German, French, economics, Mangement and Organisation, History (17/18th century wars/ Dutch golden and silver age), Geography, biology 1, Cultural studies, social studes and Physics light (weird subject, dealth with things such as global warming and evolution and social impact etc).
I also possess a Bilingual VWO diploma and a IB Language A2 diploma. Currently I'm in college, studying English Language and Culture (mainly focussed on the British Isles). I just finished my first year, and managed to pass all my classes so technically I am now also educated in the following courses:
Note: TV = language adeptness/language skills or something like that.
TV1 - writing (basic argumentative essay writing with MLA documentation thrown in)
Tv 2 - speaking (included audio training based on GPA, mainly focussed on RP accent)
TV 3 - combination of the previous two, but then harder (longer essays, more
presentations/perfecting your "accent")
Academic reading ( dealt with poetry and literature interpretation randomly picked out of Norton's anthology. Items that passed the review: Shakespearean sonnets, Tess D'ubervilles, The dumb waiter, the importance of being earnest, Fiesta, Romeo and Juliet as well as roughly 40 poems of which I've forgotten half)
From Old to Middle English (Mainly dealt with literature: Beowulf, The green knight, Canterbury tales, but also with some history and how manuscript dating/creating works)
Language science introduction course (dealt with language development as well as socio/neurolinguistics)
Literary science introduction (Dealt with the written word and various theories in the field of this particular subjects such as Barthes' Death of the author and Derrida's approach to interpreting texts)
Varieties of English, with History of English dialects as a sub course ( focussed on recognizing various dialects, such as cockney, welsh, geordie, scots, N/S Irish, GA, New York, Australian. The sub course mainly focussed on how the English language developed, and what political/historical factors impacted it)
